Tri-Tip debate: Team Reverse Sear 🥩 OR Team Trisket 🪵?

On one side, you have the classic reverse sear—perfectly medium-rare, juicy, and finished with a killer crust.

On the other side, you have the "Trisket"—smoked low and slow, wrapped, and taken to pull-apart brisket perfection.

If you are still meal-prepping dry chicken breasts in the oven, it's time to switch to chicken thighs on the smoker.

This is our go-to weekly routine at the shop because boneless, skinless thighs are practically impossible to mess up. They stay incredibly juicy for days, hold onto that wood-fired flavor beautifully, and act as a total blank canvas for the rest of your meals throughout the week. This combo of Heath Riles seasonings is pure perfection!

The real secret is the temperature. We run these at 275 degrees, but we don't pull them at 165 like a standard chicken breast. Taking thighs up to 175 or 180 degrees is the sweet spot that breaks everything down and gives you the perfect tender chew.

We had some regular French bread sitting around the shop, so naturally, we had to see how it handled the smoker.
Turns out, a Blueberries & Cream French Toast Casserole is officially our new favorite excuse to fire up the grills before noon. We swapped standard milk for coffee creamer to make the custard extra rich, loaded it with fresh berries, and buried it under a brown sugar crumble.
You get that perfect crunch, the sweet berry pockets, and just enough wood-fire flavor to remind you it came off the pit.
