Ingredients:
1 ½ cups uncooked jasmine rice
1 (14 oz) can light or full-fat coconut milk, well shaken and stirred
1 ¼ cups water
2 teaspoons sugar
1 ½ teaspoons kosher salt
1 teaspoon coconut oil
Instructions:
1. Rinse the rice under cold water until the water runs clear to remove excess starch.
2. In a medium saucepan, combine the rinsed rice, coconut milk, water, sugar, and salt. Stir until the sugar dissolves.
3. Bring the mixture to a boil over medium heat, then cover and reduce heat to low. Let it simmer undisturbed for 11 minutes.
4. Turn off the heat and let the rice steam, covered, for 10 more minutes until tender and the liquid is absorbed.
5. Fluff with a fork and stir in the rich coconut oil for that extra creamy finish.
