Keto fine chocolate Coconut Rum Boats
Whenever I make these medium bars upside down they remind me of boats - although they are so wobbly maybe I should be calling them canoes!
Lots of Colombian Arauquita single origin chocolate - the chocolate is made by me from nibs and there are toasted nibs on top. MonKKey Arauquita MilKeto chocolate forms the shell and holds the large toasted coconut chips and nibs on top.
The coconut ganache is made with my Vegan Simply White, that, being made with coconut milk, intensives the coconut flavour.
The rum layer is a ganache made with MonKKey Venezuelan Vanilla DarKeto chocolate, Lucky Bastard Premium rum, and Avalon organic heavy cream.

I used two recipes and converted them to keto:
- his Bimini bars in Chocolates & Confections; and, Jean-Pierre Wybauw's Coconut bonbon recipe in Fine Chocolates Gold.
The way I used the keto versions of the recipes and how I finished the bars is entirely mine.
