Friday fried egg sandwiches.
This was a delicacy of my childhood, especially on Fridays.
Growing up Catholic, Fridays meant finding meatless meals that everyone enjoyed, and fried egg sandwiches were a regular favourite. Nothing fancy, just an egg, mayo, salt, and pepper, but somehow they stick in my memory as something special.
My husband’s weekend breakfast specialty is a fried egg on toast with cheese, and every time he makes it, I’m reminded of those Fridays and wonder why I don’t make them for my own kids more often.
Today I remembered.
The girls thought it was extra special when I told them Grandma used to make them for me. These days, mine has two eggs for more protein, brown bread (yes, I’ve finally surrendered to adulthood and eat brown bread now), light mayo instead of the Miracle Whip of my childhood, and yolks that are perfectly soft but not runny. But the simple combination of flavours still transports me right back to our tiny house, that kitchen table, and being a kid.
One of the things I love most about creating for Starry Mantle Creations is how often faith, family traditions, and everyday memories intertwine. Sometimes it’s a handcrafted keepsake given as a gift for a special occasion. Sometimes it’s a simple meatless Friday lunch shared with your kids.
The little things have a way of lasting the longest 💜
