NON ALCOHOLIC FRUITCAKE
For 8- 10" pan
Prep time 30-45minutes
Usual oven temperature
Baking Time 2hours

INGREDIENTS
600g flour
1 cup brown sugar
250g margarine
8 large eggs
1 cup veg oil 250ml
11/2 cup Dried fruits (sunripe)
2 and half cups five alive
1 1/3 cups of white sugar
1tsp salt
4tbsp dark treacle
2tbsp Browning
2tbsp lemon zest
1tsp banana flavour
1 tsp orange flavour
2tsp dark vanilla flavour
1 tsp cinnamon
1 tsp nutmeg
1tsp cloves
1/2 tsp Baking soda
2tsp Baking powder

METHOD OF PREPARATION

Soak your dried fruits with one and half cup of your Five alive and set aside for about one hour

Prepare your pan with parchment paper

In your mixer bowl ,scoop your margarine ,veg oil,vanilla,orange,banana flavours ,white and brown sugar and in medium speed ,mix for 5minutes till well incorporated

Get a mixing bowl ,sieve your flour ,baking soda,baking powder ,cinnamon, ,cloves ,salt and nutmeg together into the bowl

Then scoop gradually ,the sifted flour mix into the wet ingredients till all are mixed into the butter batter ,add one cup of five alive and mix thoroughly .

Add Browning
Add dark treacle
Add lemon zest
Add the soaked fruits with the juice in it
Stir all together till evenly mixed

Pour in prepared pan and bake away .

You can garnish the top of your batter with dried mixed fruits ,almond,coconut flakes and cherries before tossing into the oven

Red Velvet Cupcakes with Cream Cheese Icing
INGREDIENTS
FOR THE CAKE:
1 cup butter room temperature
1 1⁄2 cup granulated sugar
2 1⁄2 cups all-purpose/plain flour
2 tablespoons cocoa powder
1 teaspoon baking powder
1 teaspoons baking soda
1 teaspoon salt
2 large eggs
1 cup buttermilk ( 1 cup milk + 1 tbsp vinegar)
1 teaspoon vinegar
2 teaspoons vanilla extract
1 tablespoon red food coloring paste
butter for pan
FOR THE FROSTING:
1 cups powdered sugar
1⁄2 cup butter softened
1⁄2 cup cream cheese softened
1 teaspoon vanilla extract
2-4 tablespoons hot water
INSTRUCTIONS
Preheat oven to 350 f/180c and prepare pan with cupcake papers
Sift together the flour, cocoa powder, baking powder, baking soda and salt into a large bowl. Set aside.
In a small bowl, whisk together buttermilk, eggs, vinegar vanilla, and red food coloring . Set aside.
In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add buttermilk mixture and mix well to blend.
Add the flour mixture and mix until combined.
Add the batter to the prepared cap cake pan (I use an ice cream scoop to make sure they are all the same size).
Bake for approximately 20 minutes, or until a cake tester comes out clean.
Remove from oven to a wire wrack till cool and let cool 10 in the pan before transferring them onto a wire wrack.
FOR THE ICING: MAKE SURE CREAM CHEESE AND BUTTER ARE AT ROOM TEMPERATURE OR ICING WILL BE LUMPY. BLEND THE CREAM CHEESE AND BUTTER IN A MEDIUM MIXING BOWL UNTIL SMOOTH.
Add the powdered sugar one cup at a time, blending after each addition.
Add the vanilla and mix to combine.

English teas SCONES

6 cups flour
250g margarine (cold margarine)
1 cup castor sugar
3 eggs
3 cups mabisi/milk
6 tsp baking powder
1 tsp vanilla essence

Extras
1 cup flour for dusting
1 egg for brushing

Preheat oven at 160 degrees

METHOD
Sieve flour and baking powder together in a mixing bowl, add the sugar and mix. Cut the margarine in cubes and rub in with the flour until combined. Make a well in the centre. In a separate bowl beat eggs,milk and vanilla essence once mixed add to the flour and mix. Remove from the bowl to a floured surface and work the dough for a minute. Roll it to about 1/2 inch thickness and cut it out into shapes and sizes desired (you can use a water glass 0r cookie cutter).
Place on a baking tray lined with baking paper,brush egg on the top and bake for 20-30mins or until golden brown.

Simple Drop Biscuits
MAKES 4 BISCUITS

cup (3⅓ ounces) all-purpose flour

¾teaspoon baking powder

¼teaspoon baking soda

⅛teaspoon sugar

⅛teaspoon salt

⅓cup buttermilk, chilled

2tablespoons unsalted butter, melted and
hot, plus extra for brushing

1. Adjust oven rack to middle position and heat oven to 450 degrees. Line baking sheet with parchment paper.

2. Whisk flour, baking powder, baking soda, sugar, and salt together in medium bowl. In separate bowl, stir chilled buttermilk and melted butter together until butter forms small clumps. Stir buttermilk mixture into flour mixture with rubber spatula until just incorporated and dough pulls away from sides of bowl.

3. Using greased ¼-cup dry measure or #16 ice cream scoop, scoop out and drop 4 mounds of dough onto prepared sheet, spacing them about 1½ inches apart. Bake until biscuit tops are golden brown and crisp, 12 to 15 minutes, rotating sheet halfway through baking.

4. Brush baked biscuits with extra melted butter, transfer to wire rack, and let cool for 5 minutes. Serve warm.
