Crown Roast of Pork

Having a big family gettogether? Go with this scrumptious Crown Roast of Pork dish.

INGREDIENTS:

1 Lynca Meats 16-rib pork rib crown roast
2 tbsp Italian herbs
2 tsp salt
2 tsp pepper

METHOD:

Preheat oven to 180°C.

Mix the herbs, salt, and pepper together and rub all over pork.

Place the pork on a rack in a roasting pan with the ribs pointing up.

Roast for about 2 hours, until the internal temperature is 70°C.

Cover the roasting pan with foil and allow to rest for 30 minutes.

Increase the oven temperature to 220°C and roast uncovered for another 10 minutes, until the meat has browned.

Fill and serve with a selection of root vegetables prepared to your liking.

Pork Fajitas

We love fajitas because they go with almost everything – especially this delicious pork filling. Bonus: these Pork Fajitas are perfect for fast, mid-week dinners.

INGREDIENTS:

500g Lynca Meats pork neck
2 tbsp olive oil
Salt to taste
1 red pepper, thinly sliced
1 green pepper, thinly sliced
1 orange pepper, thinly sliced
1 small onion, thinly sliced
1 tbsp minced garlic
1 tsp ground cumin
1 tsp chilli flakes
1 tomato cubed
Juice of 1 lime
8 tortillas, warmed

METHOD:

In a large pan heat oil.

Add pork, onion, garlic, cumin and chilli flakes and fry until browned.

Add all peppers and tomato and simmer until soft.

Add lime juice and serve hot in tortillas with sides of your choice.

Apple Maple Chops

Sweeten your regular pork chops with a drizzle of this sweet apple and maple sauce.

INGREDIENTS:

6 Lynca Meats pork chops
3 tbsp olive oil
Salt and pepper to taste
¼ cup bourbon
½ cup apple cider
¼ cup maple syrup

FOR THE APPLES:
2 tbsp unsalted butter
2 apples, sliced

METHOD:

Preheat the oven to 200°C.

Drizzle pork chops with 1 tablespoon of olive oil and season with salt and pepper.

In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Add the pork chops and sear for about 3 minutes per side. Transfer the pork chops to a plate.

Mix the bourbon, apple cider and maple syrup.

Return the pork chops to the skillet and pour some of the glaze over the pork chops. Place the skillet in the oven and cook for about 6-8 minutes.

Place chops in a serving dish and pour the glaze over.

Heat the unsalted butter in a pan over medium heat. Add the sliced apples and sauté, tossing frequently until the apples start to get soft and a little golden. Serve the apples with the pork and some roast potatoes.

Pineapple Pork Chops

Get a taste for tropical flavours with these refreshingly tangy Pineapple Pork Chops.

INGREDIENTS:

4 Lynca Meats pork chops
½ cup pineapple juice
¼ cup soy sauce
¼ cup honey
¼ cup spring onions, finely chopped
2 garlic cloves, crushed and chopped
2 teaspoons chives, chopped

METHOD:

Mix the pineapple juice, soy sauce, and honey together.

Add in the spring onion, chives and garlic. Season to taste.

Marinate the pork chops with the marinade in the fridge for two hours.

Drain the chops and braai over medium to low coals while basting with the leftover marinade.

Stuffed Pork Fillet

This Stuffed Pork Fillet is juicy, tender and bursting with flavour. What more could you want?

INGREDIENTS:

1 Lynca Meats pork fillet
4 tbsp olive oil
1 onion, finely chopped
500g fresh spinach
250g feta cheese
Salt and freshly ground pepper to taste
3 tbsp Italian seasoning
1½ cup dry white wine
1 cup chicken broth
Twine to wrap

METHOD:

Preheat the oven to 180°C.

Heat 2 tbsp olive oil in a large pan over medium-high heat. Sauté the onions for 5 minutes or until they soften. Add the spinach and sauté until wilted down. Remove from heat and allow to cool.

Cut through pork fillet lengthwise and pound each side until about ½cm thick.

Place the spinach and onion mixture over tenderloin and top with the feta cheese. Roll tenderloin from the long side, and tie with string so it holds its shape.

Sprinkle the outside with salt, pepper and Italian seasoning.

Heat the remaining olive oil in an ovenproof dish over medium-high heat. Add tenderloin and sear on all sides for about 5 minutes in total.

Place the skillet in oven and roast for about 35 – 40 minutes. Remove from oven.

Use the same skillet and place back over medium heat, adding wine and broth. Boil until the sauce thickens. Season with salt and pepper. Remove strings from the pork and cut into slices.

Spoon the sauce over the pork and enjoy!
