Healthy Pineapple Carrot Muffins🍍🥕

Soft, moist, and naturally sweetened, these carrot and pineapple muffins make the perfect snack or breakfast treat 🥕🍍🧁

INGREDIENTS
- 2 cups (150 g) grated carrots, from
- 400ml can crush pineapple, drained
- 2 large eggs
- ⅓ cup avocado oil , or neutral tasting oil
- ⅓ cup maple syrup or honey
- 2 teaspoons vanilla extract
- 2 cups white whole wheat flour.
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 teaspoons ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground nutmeg

INSTRUCTIONS

Step 1
Preheat oven to 180°C (350°F). Line a 12-hole muffin tin or grease lightly.

Step 2
In a large bowl, combine carrots, drained pineapple, eggs, oil, maple syrup, and vanilla.

Step 3
In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.

Step 4
Add dry ingredients to wet ingredients and mix until just combined.

Step 5
Divide batter evenly among muffin cups.
Bake for 20–22 minutes, or until a toothpick inserted in the center comes out clean.

Cool for 10 minutes before serving.

Pineapple Chicken Skewers 🍍🍗

Sweet, savoury, and perfect for the grill!🍍😋

INGREDIENTS
- 450 g boneless skinless chicken breasts,
cubed.
- 450 g fresh pineapple chunks
- 80 ml pineapple juice
- 80 ml soy sauce
- 3 tbsp brown sugar
- 1 tbsp olive oil
- 1 tsp ground ginger
- 2 garlic cloves, minced

METHOD
1. In a bowl, whisk together pineapple juice, soy
sauce, brown sugar, olive oil, ginger, and
garlic.

2. Add chicken and pineapple to the marinade.
Cover and refrigerate for 3 hours.

3. Thread chicken and pineapple onto skewers,
alternating pieces. Reserve leftover
marinade.

4. Preheat grill to medium-high heat and lightly
oil the grates.

5. Grill skewers for 5–7 minutes, brush with
marinade, then turn and grill another 4–6
minutes until chicken is cooked through.

6. Serve hot and enjoy!

Perfect for weekend braais or easy weeknight dinners.😬🍍🍍

EASY Sweet Pineapple Bake🍍🥧

Warm, comforting baked pineapple infused with cinnamon and vanilla. Quick to prepare and perfect served with ice cream or as a sweet side for family gatherings🤤😍🍍

INGREDIENTS
- 2 teaspoons vanilla extract
- 2 tablespoons cornstarch
- ¾ cup sugar
- 2 eggs
- 1 (560g) can crushed pineapple, including its juice

→ Cinnamon Butter Topping
- 1 teaspoon cinnamon
- 1½ tablespoons butter, cut into small pieces

→ Optional Extras
Whipped cream
Vanilla ice cream

INSTRUCTIONS

Step 1
Preheat oven to 175°C.

Step 2
Grease a 23cm x 23cm baking dish.

Step 3
In a large bowl, mix pineapple (with juice), sugar, eggs, cornstarch, and vanilla until smooth.

Step 4
Pour mixture into the dish and spread evenly.

Step 5
Dot with butter and sprinkle with cinnamon.

Step 6
Bake for 45 minutes, until golden and set (toothpick should come out clean).

Step 7
Let cool slightly before serving. Enjoy warm or at room temp—with ice cream or whipped cream, if desired. Enjoy!😉
