Thewoollyninja serves up yet another winner dinner 🕺🏼using our thick and creamy yoghurt as the marinade base for this
Chicken Schwarma Bowl 🙌🏼🙌🏼
Ingredients:
For the marinade:
💡500g of deboned chicken thighs or a mix of deboned thighs and chicken fillet
💡1/2 cup of Bush Hill Cheese Greek yoghurt
💡Spice Mix of 15ml smoked paprika, 5ml cumin, 1/2 tsp of turmeric, 5ml chicken spice
💡Clove of garlic, grated
💡60-80ml of Olive oil (I used African Oils Smoked Olive oil)
For the Tzatziki:
💡1/2 cup Bush Hill Cheese Greek yoghurt
💡1/2 cucumber grated
💡Heaped tablespoon of freshly chopped mint and oregano (you can admit the oregano)
💡Squeeze of lemon juice
Accompaniments:
💡Portion of yellow/white/brown rice or couscous or bulgar wheat
💡Avocado
💡Chopped tomatoes
💡Black beans(drained)
💡Red onion pickle (opt)
To make the Tzatziki:
💡Grate the cucumbers, sprinkle with a little salt and leave over a sieve to drain
💡After 30min, squeeze all the liquid out
💡Add the fresh herbs, cucumber and squeeze of lemon juice to the yoghurt
You will need:
Loaf pan
Baking paper
Method:
💡Marinade the chicken by adding all the ingredients to the chicken and marinating for at least 60min or overnight.
💡Once marinated, press down into a loaf pan
💡Drizzle extra olive oil and cover with foil
💡Bake in a preheated oven at 180C for 30-40min, remove the foil and bake uncovered for 10min or until the chicken is gnarly and cooked
💡Allow to rest for at least 15-20min
While the chicken is cooking make the rice/couscous etc and tzatziki
To assemble:
💡Add your choice of carb, chicken, avocado, black beans, tomatoes and serve with tzatziki
Note: this chicken is great in wraps and sandwiches too!
