Hand-crafted cheeses & dairy products produced on Underbush Farm in the magnificent Underbush Valley in Creighton, southern KZN. The Bush Hill Cheese factory is situated in what was once the original dairy of Underbush Farm surrounded by fields of kikuyu and rye grass where our cows graze happily overlooked by Bush Hill. We supply restaurants, hotels, lodges, delicatessens & retail outlets daily.

Every day, twice a day, at almost the same times, the herd makes this journey. They know the routine. 🍀🍀🍀

It’s the steady rhythm of Underbush Farm ~ literally from the pastures to the dairy and back. Every single morning and evening, 365 days of the year, year in and year out, come rain or shine, over and over, again and again these meadow ladies know the pattern.
Long before any cheese 🧀 is crafted or any yoghurt 🥛 is cultured, it begins with this daily commute 🌿

What’s for lunch you ask? How about a Camembert & Ham Gourmet Sandwich 🙌🏼🙌🏼🙌🏼🙌🏼 courtesy of Thewoollyninja - um, yes please!!

Ingredients:
🍀Focaccia bread
🍀Shaved ham or deli meat of your choice
🍀Bush Hill Cheese Camembert
🍀Dijon mustard
🍀Butter
🍀Fig jam

Method:
🍀Slice a portion of focaccia in half
🍀Spread with butter and a little Dijon mustard
🍀Add plenty of shaved ham
🍀Then nice thick slices of Camembert cheese
🍀Spread some fig jam on the second slice and that’s it.

You can choose to eat is as is or pop it into the toaster/panini or under the grill.

There really is something timeless about a proper carrot cake 🥕🥕🥕
warm spices, a little sweetness, and that unmistakable richness.

But the real magic? The icing 🙌🏼 using our decadent cream cheese. 🥳

Our cream cheese is made the traditional way; hung in muslin cloths to remove the whey, giving it a naturally thick, rich texture that holds beautifully. No stabilisers, no shortcuts, making it the choice of bakers when it comes to icing, cakes, bakes and all things decadent 🙌🏼

🧾 Carrot Cake Recipe

Ingredients:
• 2½ cups (625 ml) flour
• 2 tsp (10 ml) baking powder
• 1½ tsp (7.5 ml) bicarbonate of soda
• 3 tsp (15 ml) mixed spice
• 1 tsp (5 ml) salt
• 1½ cups (375 ml) sugar
• 1¼ cups (310 ml) oil
• 4 eggs
• 2 cups (500 ml) grated carrots 🥕🥕🥕
• 1 cup (250 ml) grated fresh pineapple (or crushed tinned pineapple)
• ½ cup (125 ml) chopped pecan nuts
• ¼ cup (62.5 ml) smooth apricot jam



Method:
1. Sift the dry ingredients together twice.
2. Beat the sugar, oil and eggs until well blended.
3. Using an electric mixer, beat on high speed for 3 minutes.
4. Add the carrots, pineapple, nuts and apricot jam and mix well.
5. Sift the dry ingredients over the mixture and fold in until combined.
6. Grease a 28 cm loose-bottomed cake tin.
7. Pour in the mixture and bake at 180–190°C for 45 minutes.
8. Allow to cool in the tin for 10 minutes before turning out.

🧁 Cream Cheese Icing
• ½ cup (125 ml) butter
• 4 cups (500 g) icing sugar
• 1 tsp (5 ml) vanilla essence
• 250 g Cream Cheese

Method:
1. Cream the butter and gradually add the icing sugar.
2. Add the vanilla, followed by the cream cheese.
3. Mix gently; avoid overbeating to keep the texture firm.
4. Ice once the cake has completely cooled.

We’ve been exploring ways to naturally increase the protein content of our milk 🏋🏽🏋🏻‍♀️and it all starts in the pastures 🌱

A new variety of ryegrass, higher in protein is showing promising results — with one small difference.. The milk is coming through a little greener 🍀🍀🍀 than usual 😬😬😬…

Nutritionally speaking, it’s exceptional, but visually … well we’ll let you decide… 🤷🏼‍♀️

Thewoollyninja serves up yet another winner dinner 🕺🏼using our thick and creamy yoghurt as the marinade base for this
Chicken Schwarma Bowl 🙌🏼🙌🏼

Ingredients:
For the marinade:
💡500g of deboned chicken thighs or a mix of deboned thighs and chicken fillet
💡1/2 cup of Bush Hill Cheese Greek yoghurt
💡Spice Mix of 15ml smoked paprika, 5ml cumin, 1/2 tsp of turmeric, 5ml chicken spice
💡Clove of garlic, grated
💡60-80ml of Olive oil (I used African Oils Smoked Olive oil)

For the Tzatziki:
💡1/2 cup Bush Hill Cheese Greek yoghurt
💡1/2 cucumber grated
💡Heaped tablespoon of freshly chopped mint and oregano (you can admit the oregano)
💡Squeeze of lemon juice
Accompaniments:
💡Portion of yellow/white/brown rice or couscous or bulgar wheat
💡Avocado
💡Chopped tomatoes
💡Black beans(drained)
💡Red onion pickle (opt)

To make the Tzatziki:
💡Grate the cucumbers, sprinkle with a little salt and leave over a sieve to drain
💡After 30min, squeeze all the liquid out
💡Add the fresh herbs, cucumber and squeeze of lemon juice to the yoghurt

You will need:
Loaf pan
Baking paper

Method:
💡Marinade the chicken by adding all the ingredients to the chicken and marinating for at least 60min or overnight.
💡Once marinated, press down into a loaf pan
💡Drizzle extra olive oil and cover with foil
💡Bake in a preheated oven at 180C for 30-40min, remove the foil and bake uncovered for 10min or until the chicken is gnarly and cooked
💡Allow to rest for at least 15-20min

While the chicken is cooking make the rice/couscous etc and tzatziki

To assemble:
💡Add your choice of carb, chicken, avocado, black beans, tomatoes and serve with tzatziki

Note: this chicken is great in wraps and sandwiches too!
