On the 𝟏𝟔𝐭𝐡 𝐨𝐟 𝐉𝐮𝐧𝐞 𝟏𝟗𝟕𝟔, the children of Soweto walked out of their classrooms and into history. They were students. Teenagers. Some were younger than that. They were afraid, and they went anyway.

Fifty years later, we remember them not just for what they did — but for what they believed. That this country was worth fighting for. That its children deserved better. That one day, things would be different.
They were right.

Today belongs to every young South African who carries that legacy forward — in classrooms, in communities, in the quiet, determined work of building something better than what came before.

𝐔𝐦𝐛𝐫𝐢𝐚 𝐢𝐧𝐬𝐩𝐢𝐫𝐞𝐝 𝐌𝐮𝐬𝐡𝐫𝐨𝐨𝐦 𝐓𝐫𝐮𝐟𝐟𝐥𝐞 𝐏𝐚𝐬𝐭𝐚

Umbria is a landlocked region in central Italy that most people fly over on the way to Rome or Florence. No coastline, no famous skyline. What it has is porcini mushrooms, truffles, and a way of cooking pasta that treats both with complete seriousness.

This is our version of that pasta. Handmade dough torn into rough pieces rather than cut — the unevenness is the point. Golden porcini with garlic, thyme and two anchovy fillets that dissolve completely into the oil and leave nothing behind except depth. And then, just before the bowl reaches the table, a drizzle of our White Truffle Flavoured Oil.

That drizzle is the whole dish. Cold, at the last possible moment, over each bowl.

A great day at the Africa Food Show at the CTICC, Cape Town!

It’s been wonderful catching up with customers, partners and new connections, and showcasing the Wilson’s Foods range of premium olive oil, speciality oils and pantry products.

A special thank you to Julie Fisher and Vincent Howard, who were manning the stand today and doing a fantastic job representing Wilson’s Foods.
We were especially delighted to welcome Steve Wilson to the stand today and spend some time catching with old acquaintances during the show.

𝐒𝐞𝐬𝐚𝐦𝐞 𝐂𝐡𝐢𝐥𝐥𝐢 𝐍𝐨𝐨𝐝𝐥𝐞𝐬
There is a bowl of noodles that has become a standing fixture in our kitchen. Cold egg noodles, a tahini and peanut butter sauce, chilli crisp over the top, spring onions and sesame seeds to finish. Ten minutes from start to bowl, and the kind of thing you stop thinking of as a recipe after the second time you make it.

The sauce is the whole story. Tahini, peanut butter, soy, garlic, a splash of cold water to loosen it — and our Toasted Sesame Oil whisked through at the end. Two teaspoons. That's what makes it taste finished rather than assembled.

𝐏𝐞𝐚𝐧𝐮𝐭 𝐨𝐢𝐥 doesn't get nearly enough credit in the South African kitchen.
It handles heat better than most oils — smoke point around 230°C — which makes it the right call when the pan needs to be properly hot. Stir-fries, roasting trays, marinades, deep frying. The flavour is warm and mildly nutty without taking over whatever you're cooking.

Two things worth trying this week — our Sweet and Sour Peanut Stir-Fry, which is exactly what a Friday evening should look like, and the Spicy Thai Peanut Chicken, which gets better the longer the sauce sits.

We have to admit… it did a pretty decent job.

Not bad! Although we suspect Snowy was only interested in what was for dinner.

Sharing our 𝐟𝐨𝐮𝐫 𝐟𝐚𝐯𝐨𝐮𝐫𝐢𝐭𝐞 𝐝𝐨𝐮𝐠𝐡𝐧𝐮𝐭 𝐫𝐞𝐜𝐢𝐩𝐞𝐬 — and they couldn't be more different from each other.

A Croatian fritule — boozy little things, dusted with icing sugar straight from the oil. A yeasted spiced doughnut that smells like a hot cross bun and takes most of a Saturday afternoon. A cheesy beer-battered hush puppy from the American South that has no business being as good as it is. And a mini vegan doughnut made with our Coconut Oil.

The hush puppies went first. They always do.
