What do you do to cool down with 30 degrees and all beaches closed?
You eat a HOT Durban curry π
2 medium potatoes
Half a medium onion
2-4 cloves of garlic
1 tsp grated ginger root
1 large carrot
1 cup peas
1 tsp ground cinnamon
1 tsp ground cumin
1 tsp ground coriander
3 tsp masala or curry powder of choice
1/2 tsp cumin
400ml chicken stock
2 chilis
2 tomatoes
1 sprig curry leaves
LOTS of coriander
1. Add oil onions and curry leaves to a saucepan until onions are translucent
2. Add your spices, garlic, ginger and chilli and allow to cook on a low heat avoiding burning your spices
3. Add your tomatoes, carrots and half the stock and cook for a further 5 minutes.
4. Add your potatoes and the remainder of the stock and allow to cook for a further 30 minutes or until potatoes are soft.
5. Serve with rice, roti's or as a bunny chow
