🔥 𝗣𝗲𝗮𝗰𝗵 𝗧𝗲𝗮 𝗚𝗹𝗮𝘇𝗲𝗱 𝗣𝗼𝗿𝗸 𝗕𝗲𝗹𝗹𝘆 🍑🐷
Today we're trying to recreate Interstellar BBQs famous Peach Tea Glazed Pork Belly.
Smoked low and slow over peach wood until perfectly tender, then cubed and coated in a rich peach tea glaze that caramelises beautifully over every bite.
Sweet. Smoky. Sticky. Absolutely irresistible. 🤤🔥
🍑 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
• Whole pork belly (skin removed)
• Salt
• Coarse black pepper
• Granulated garlic
🍑 𝗣𝗲𝗮𝗰𝗵 𝗧𝗲𝗮 𝗚𝗹𝗮𝘇𝗲
• 1 cup strong peach tea
• ½ cup brown sugar
• ¼ cup honey
• 2 tbsp peach jam
• 1 tbsp apple cider vinegar
• Pinch of salt
🔥 𝗠𝗲𝘁𝗵𝗼𝗱
1️⃣ Set up your Weber using the snake method (2 briquettes on the bottom, 2 on top). Add a few chunks of your favourite smoking wood. We used Peach Wood Chunks for an extra layer of fruity smoke.
2️⃣ Lightly coat the pork belly with peach iced tea, then season generously with salt, coarse black pepper, and granulated garlic.
3️⃣ Place the pork belly in the smoker and cook until it reaches an internal temperature of around 74°C, spritzing with peach iced tea throughout the cook.
4️⃣ Wrap the pork belly tightly in foil and return it to the smoker. Continue cooking until probe tender, checking from 91°C onwards.
5️⃣ While the pork belly cooks, combine all the glaze ingredients in a saucepan. Simmer gently until slightly reduced and thickened.
6️⃣ Once the pork belly is tender, remove it from the smoker and allow it to rest for 30 minutes.
7️⃣ Cut into bite-sized cubes and toss generously in the peach tea glaze until every piece is coated in sticky, smoky goodness.
🍑🔥 The result? Tender pork belly with a beautiful bark, wrapped in a sweet peach tea glaze that tastes like barbecue candy.
Sweet. Sticky. Smoky. Everything you could want from a great piece of pork belly.
