Best-Ever London Broil

Ready in: 1 Hr, 25 Mins
Serves:

Ingredients:
1 (900g - 1kg) Steak (Top-round steak, flank steak)
Kosher salt
Freshly ground black pepper
1/4 c. extra-virgin olive oil
Juice of 1/2 lemon
2 tbsp. packed brown sugar
1 tbsp. Worcestershire sauce
4 cloves garlic, minced

For the Herb Butter:
1/2 c. (1 stick) butter, softened
1 tbsp. freshly chopped parsley
2 tsp. freshly chopped chives
Zest of 1/2 lemon
1/2 tsp. kosher salt
Pinch crushed red pepper flakes

Method:
1. In a medium bowl, whisk together oil, lemon juice, brown sugar, Worcestershire, and garlic.

2. Season steak generously with salt and pepper, then rub oil mixture all over. Let sit at room temperature for an hour or refrigerate up to overnight.

3. Preheat broiler. Brush off garlic then place steak on a sheet pan. Place pan on top rack (closest to the heating element) and broil 6 to 7 minutes, until top is lightly charred. Flip and broil 4 to 5 minutes more, until internal temperature reaches 125° (for medium rare).

4. Let rest 10 minutes before carving. Serve with herb butter.

Make Herb Butter:
1. In a small bowl, mix butter with herbs, lemon zest, salt, and red pepper flakes until smooth. Refrigerate until ready to use.

Shepherd's Pie Baked Potatoes

Ready in: 35 Mins
Serves: 4

Ingredients:
4 Potatoes (about 220 gram each)
5 tablespoons unsalted butter
1/2 onion, chopped
3 cloves garlic, sliced
1 tablespoon chopped fresh thyme
Kosher salt
450g ground beef
Freshly ground pepper
1 cup low-sodium beef broth
3 tablespoons ketchup
2 teaspoons Worcestershire sauce
1 cup frozen peas and carrots, thawed
1 cup shredded cheese (about 115g)

Method:
1. Pierce the potatoes with a fork in a few spots. Put on a microwave-safe plate and microwave until tender, 14 to 16 minutes.

2. Meanwhile, melt 1 tablespoon butter in a large skillet over medium-high heat. Add the onion, garlic, thyme and 1/4 teaspoon salt. Cook, stirring, until the onion is soft, about 4 minutes. Add the beef, 1/2 teaspoon salt and a few grinds of pepper and cook, breaking up the meat, until no longer pink, about 4 minutes.

3. Stir in the beef broth, ketchup and Worcestershire sauce and bring to a gentle simmer. Cook, stirring occasionally, until slightly thickened, 6 to 8 minutes. Stir in the peas and carrots and warm through, about 1 minute; season with salt and pepper.

4. Preheat the broiler. Halve the potatoes lengthwise and fluff the flesh with a fork; top each potato half with 1/2 tablespoon butter and season with salt and pepper. Place on a baking sheet. Divide the meat mixture among the potato halves, then top with the cheese. Broil until melted, about 2 minutes.

Tasty Lamb Shank Madras

Ready in: 4 Hrs, 40 Mins
Serves: 4

Ingredients:
4 tbsp natural yogurt
1 tbsp ground cumin
1 tsp turmeric
4 lamb shanks
2 tbsp sunflower oil
4 sliced onions
4 tbsp Madras curry powder
8 garlic cloves, grated or crushed
thumb-sized piece ginger, grated
220g tin chopped tomatoes
3 whole dried red chillies
5 curry leaves
4 cardamom pods, split
3 tbsp lime pickle
300ml chicken stock
chopped mint leaves

Method:
1. Tip the yogurt, cumin, turmeric, 1 tsp sea salt and the lamb shanks into a large mixing bowl, then mix to coat the lamb. Cover and pop in the fridge for a couple of hrs, or overnight if you have time.

2. Heat oven to 160C/140C fan/gas. Heat the oil in a large flameproof casserole dish over a medium heat, add the shanks and brown all over for 10 mins, then remove from the dish. Scatter the onions into the dish and fry for 10 mins until golden brown. Stir in the curry powder, garlic and ginger and cook for 3 mins until aromatic. Add the lamb shanks back to the dish along with the tomatoes, chillies, curry leaves, cardamom pods and lime pickle. Give everything a good stir and pour over the stock. Bring up to a simmer, cover, then transfer to the oven and cook for 3 hrs.

3. Remove the lid and cook for 1 hr more – this will help reduce some of the liquid and char any exposed meat. When the lamb is very tender, leave to rest for 30 mins or leave to cool completely and reheat the next day for the best flavour. (Can be made up to two days in advance.) Scatter with chopped mint and serve with rice or cous-cous.

Delicious Summer-in-Winter Chicken 🍗

Ready in 25 mins
Serves 4

Ingredients:
1 tbsp Olive oil
4 Boneless skinless chicken breasts
200g pack Cherry tomatoes
3 tbsp Pesto
3 tbsp Sour Cream (half fat is fine)
Fresh basil, if you have

Method:
1. Heat the oil in a frying pan, preferably non-stick. Add the chicken and fry without moving it until it takes on a bit of colour. Turn the chicken and cook on the other side. Continue cooking for 12-15 mins until the chicken is cooked through. Season all over with a little salt and pepper.

2. Halve the tomatoes and throw them into the pan, stirring them around for a couple of minutes until they start to soften. Reduce the heat and stir in the pesto and sour cream until it makes a sauce. Scatter with a few basil leaves if you have them, then serve with rice and salad or mash and broccoli.
