We had great conversations about his views on chocolate making, flavor profiling, state of the industry, sourcing cacao beans, and, of course, tasting some of his well crafted, award-winning chocolate bars!

And if you know me, you know how picky I am about fine chocolate! These bars, modeled after Indian spices, nuts, and flavors. And they do not disappoint!

I truly enjoyed our visit a few weeks back with Elliott and Hersh*t. Great people!

I can see why they won a recent and are listed as one of the best chocolates in America by magazine!

A visit to one of the locations in Bali.
I didn't get a chance to meet the owner a have a chat, but we received a very short tour and then got to taste some of the chocolate samples in their store.

There are numerous flavors and percentages, all plant based ingredients.

Couldn't leave without buying a few bars! Mocha (least favorite because the coffee granules were too large for my liking), Honeycomb (yum) and Sea Salt with Nibs (personal favorite)

I find the chocolate flavor to be very mild. Even at the higher percentages there is little to no astringency. 🍫

Can't travel Bali without finding Chocolate! I had a wonderful conversation with of

We tasted their raw Absolute Chocolate, Mint and Goji Berry, Raisin & Cashew and Wild Orange & Fig.

Three simple ingredients, cacao, coconut and coconut sugar. There is no chocolate covering. So I liken it somewhat to a dark chocolate fudge rather than a truffle center. Still, very creamy and delicious.

All are made with a 70% house made raw chocolate and require refrigeration.
They work directly with local cacao farms that are organic certified.

We couldn't leave without a cup of their ceremonial cacao beverage. A lovely finish to our travels through Ubud.
