Dear friends of barcacao,

The days are getting longer, the weather is heating up and we are looking forward to a fantastic summer at the markets and in the shop. We are approaching 10 years in business, albeit with a 3 year sabbatical, so why not celebrate in the shop on July 10? Or 7/10, get it? We will have more information for you in the next couple weeks so save the date. We are also planning more events for the months ahead.

Now to dessert. This week is a pistachio praline pannacotta, lemon gel, sea salt caramel, almond + malt crumb spectacular. I love pistachio and I love the simplicity and surprising lightness of pannacotta. Add in a little acidity of lemon, and this makes for a wonderful late spring dessert worthy of a barbecue and enjoying the sunny weather!

Available in store from Thursday and at Wheaton + Geneva French Markets this weekend! While they last.

Due to the growing cost of doing business, we will be introducing price rises from June 1. When I founded barcacao in 2016 my commitment was to use single origin ingredients from Latin America in my chocolate. There is no compromise. My intent has always been to produce the finest chocolates and confections for you to enjoy and I will continue to do so using only the finest ingredients by the finest farmers.

We now have Brownies + Flapjacks in shop throughout the market season.

Dear friends of barcacao,

Sustainability + provenance has been very important to me dating back to my time as head of pastry at Tate Museums then as executive pastry and director of sustainability at Cubitt House in the UK. Spending time with farmers and understanding their produce in the fields is an amazing experience. Both at Tate and Cubitt House, we worked with a British brief, using as much produce locally as possible. Dairy from the West Midlands; line caught fish from Cornwall and the South Coast; strawberries from Kent; blueberries from Hampshire, we had an abundance of produce to choose from throughout the seasons. When I created barcacao in 2016, the ethos of sustainability and provenance was paramount. Use only fine aroma cacao, cane sugar and dairy from Latin America. I have had the privilege to visit many of the farms in Ecuador planting sugar cane in Pacto, picking fruit in Los Rios and milking cows in Turucucho. Locally, I try to utilise as much fresh fruit and produce as possible throughout the seasons. Let me know if you would like to learn more about sustainability and provenance particularly our grower partners in Ecuador.

Now for dessert. This week is a dark chocolate mousse, vanilla whipped ganache, almond + malt crumb. I made this one a number of weeks ago and was a runaway hit. So I thought I would make it again.

Dear friends of barcacao,

This time of year is really one of my favourite times of the year. Spring has sprung and with longer warmer days, it gives us the opportunity to spend more time outdoors with friends and family. The markets are now starting to boom with more of the farmers arriving from Michigan and more and more people come out to enjoy the mornings without risk of frostbite!

I wrote a few weeks ago about my local market in Paris and in general how markets are so important to a community such as Wheaton + Geneva. My former home of Brentford in west London was settled by Saxons around 700, more than 200 years before London. It quickly became a major trading area due to the proximity to the Thames and fertile orchards and fields just north of my former home on the high street. By 1306 Brentford had been established as a market town by royal decree from Edward I. More than 3000 acres of land provided 300 varieties of apples and pears with low crops and flowers growing beneath them. Over time and up until the middle of the 19th century, Brentford Market was one of the principal providers of produce outside of Covent Garden in central London. Unfortunately, the market suffered immensely in the early 20th century. The market building still stands but has been converted to luxury flats. See photo below, as you can just see the building from the end of my road.

Now for dessert. And it keeps a little bit with the Brentford vibe this week and a small taste of nostalgia for me. Spiky Lemon was on the Yauatcha dessert menu for years and this is my little twist in a jar. Lemon curd, lemon gel, vanilla whipped ganache + ginger biscuit. Ironically, Yauatcha + Hakkasan was my first job in London and was to be my final one, as well.

Dear Customers,

This Sunday is Mother's Day and we have a number of great chocolate gifts in shop and at the markets this weekend including a stunning citrus + basil cake!

Let them eat cake! Citrus + basil, that is. I developed this cake specifically for afternoon tea at the Epsom Derby whilst I was head of pastry at the Royal Automobile Club at Woodcote in Surrey, England and continues to be part of my pastry repertoire today. Made with a pureé of orange, mandarin + lemon, ground almond, eggs, demerara, and fresh basil, it is a perfect cake for this time of year and a perfect treat for a Mother's Day brunch or lunch. Gluten free and topped with a roasted corn chocolate whipped ganache!

Dear Customers,

A couple weeks ago I wrote about my local market on Boulevard Raspail in Paris and the connection to the French Markets we adore in Chicago. Some of you may have noticed this past Saturday at Wheaton a gentleman walking the market speaking French to a small film crew. In fact, that was Sebastién Bensidoun who owns the markets for a television series named "Grande Reportage" on French channel TF1!

Staying with the markets, our dessert for the weekend is one of my favourites at this time of year. A burnt honey cream + stem ginger biscuit base. Light and refreshing with a little kick of ginger on the bottom.
Available at Wheaton + Geneva French Markets exclusively. As always, come early and quickly!

Our jasmine 38% milk chocolate bar is back! This bar was the very first I developed over ten years ago when I founded barcacao so it is quite special to me. The idea evolved from a plated dessert I created whilst working in London using gunpowder tea. I absolutely love the aroma of jasmine and it really works with my single origin milk chocolate.

We now have Brownies + Flapjacks in shop during the market season.
