One of my favorite mushrooms to pick, logging Morels! These are tough to find as they blend in perfectly with the plethora of ponderosa and Jefferson pine cones littering the forest floor.

Wasabi helped me reconnect with the land that raised me. I call it the Green mid life crisis…best thing that’s ever happened to me!

This video is a great example on the lack of exposure and awareness even the best chefs have regarding the role Oroshigane (graters) plays in the flavors wasabi can generate. Here we took the same exact wasabi stem and grated it on multiple grating surfaces. Each surface creates different flavors and alternating complexities. Like switching from alto saxophone to an oboe. Each oroshi serves a different function; from prolonging pungency to maximizing potential.

As I’ve learned over time, the oroshi is half the wasabi battle 👌

Happy last day of 2025!!! Cheers 🥂 to 2026…

2025 was really good to us. We learned a ton, created new relationships, and expanded our small farm a bit. A big goal was getting more data within our beds. By learning what’s working and what doesn’t with concrete metrics, we will only grow better wasabi.

We will never produce large amounts. That is not our goal. We want to combine the purest spring water on Earth with the best wasabi genetics available…and grow something truly special. I wish everyone could try our stuff, but I don’t imagine that being a possibility.

I’d like to give a special salute to the true stewards of nature. When I leave this planet, the land I worked will be healthier for the next generations to come. For me, this is the goal. What drives me. What I love. Wasabi has given me this gift. And I will always love and hold this plant in the highest respects.

Thank you Alexandra Byrne from for the excellent article. It’ll be interesting to see if Trump tariffs imported Japanese wasabi. It’s already super expensive due to massive demand, small supply, climate change, aging farmers, and the difficulty in growing the plant commercially. In the meantime, I’ll just keep having fun doing what I’m doing 👌 Hoping to harvest in a couple months.

WASABI LEAF & STEM Tincture
- organic grain alcohol
- Mt Shasta spring water infusion

I’m very excited about this product. This is a tincture collaboration between myself and . Right now we’re in preliminary testing. I keep a bottle in my car and use as a mouth and face spray.

This tincture was made using the leaves and petioles (leaf stems) of my freshly harvested wasabi, then infused with organic grain alcohol and unfiltered Mt. Shasta spring water over a 2 week period.

Yasuko is a master herbalist that is native Japanese and fuses her cultural wisdom with years experience in western apothecarial methods. I’ve used a range of her products and they are all absolutely phenomenal. I don’t know what half of them are and I don’t know much regarding cosmetics, but I do when when something is made with meticulous love and attention. I can see and feel the energy and knowledge that Yasuko enervates into her offerings.

I strongly believe Wasabi as a cosmetic application is an entirely new frontier with exciting potential. What Wasabi based cosmetics would you be interested in?

A true masterpiece!! I’ve been looking for an artist that could capture the essence and magnificence of the Wasabi plant in a botanical fashion and absolutely knocked it out of the park! We also wanted to label the anatomy of the plant in English, kanji, and phonetic Japanese, which we were able to achieve thanks to a similar project I did with a year or so ago. I can’t wait to get the watercolor print and frame it ❤️
