What's the difference between butter and ghee? ๐ง Is one better than the other? โฌ๏ธโ

The main difference is:โ

๐ Butter is made up of butterfat + milk proteinsโ
โ
๐ Ghee is made up of only butterfatโ
โ
This means ghee has a higher smoke point than butter and therefore, is better suited to high heat cooking ๐ฉโ๐ณโ
โ
It also means that ghee has next to no lactose and casein ๐ฅ since the protein has been removed.โ
โ
Butter already has very low amounts to begin with ๐ but for those very sensitive to lactose and/or casein they can usually tolerate ghee! โ

In terms of taste, butter is creamy and has more of a milky taste ๐ฅโ
โ
Whereas ghee has a consistency closer to coconut oil ๐ฅฅ and has a slight nutty taste.โ

Both are good sources of vitamin ๐
