You just gotta keep going til you run out of spoons…

This is what I tell myself on days when the testing runs amok.

It’s bound to finish at some point, and hopefully there will be some tasty formulas to move forward with.

Often my new recipe testing sessions blindside me. I never schedule them, but I think about recipes all the time, and sometimes the creative floodgates burst and I go with the flow.

These past fews days have been busy like that. Got the new website to 80%, aaaannnddd now here we are. Trying new things. Wanting to finish the website too, but this is in front of me now.

We’re reformulating all of our existing recipes (mostly done) and also trying new ones.

Our citrus flavors are very solid with the new style, and nut flavors are better than ever, but I’m not sure yet if our non-citrus fruit flavors are going to make the cut.

Raspberry has been on the back burner for about a year now. It was one of our first five recipes, and popular, but the texture needs work, and now that we’re removing coconut oil from our recipes it’s having a tough time making the adjustment.

It may have to come back with a citrus pairing (Raspberry Lime sounds good, right??)
and Strawberry may need Lemon now…

We’ll see! Nothings off limits right now.
But I have to know where to draw the line and be ok if there are some flavors don’t fit anymore.

It’s been a busy start to the year.

I took on a variety of fun projects in January. And, I’m not quite done with any of them, but I am happy with how they’re going.

In a nutshell:

- I’ve been reformulating our entire line of truffle ganaches. Removed coconut oil completely from our dairy-free recipes. Using cocoa butter more intentionally in formulas now as a supporting fat, and also testing it as an infusion-vehicle for added flavors.
- today’s tests (pictured): two single origin (pure chocolate) ganaches, reworked raspberry (finally), olive oil & lemon, chile rojo (habanero), and tangerine.
-will have all four citruses running this year somehow: orange, tangerine, lemon, lime
- I’ve been tasting many, many new chocolates. Looking to bring in some new bar origins (including fruity tastes for the first time)
-will also start working some of these into our truffles. is looking good for some truffles. For both, is really special in the fruity department. For pure chocolate (definitely bars, maybe truffles) is definitely entering the mix.
- Very excited to taste some of these unique spices from !
- Testing new times and temperatures for our ghee infusions- coffee first, then hopefully cardamom if all goes well.
- Also trying to make some glycerites for water-soluble flavors- Rooibos and Vanilla are up first there
- Got a 10lb capacity stone grinder/melanger! This just showed up today. It is designed for making small batches of chocolate, but our intended use is for housemade nut butters.

One of the double-edged swords of being a solo operator is the flexibility of schedule.

I love being able to choose what I’m doing, and being able to change direction whenever. It lets me shift my workload depending on mood/energy/necessity.

But also, without distinct structure, things can get chaotic. Everything always takes longer than anticipated, and as a single person my capacity is limited compared to my creativity.

Workin on that.

Oh yeah, also rebuilding the website!
That should be done in the next week or so, and for the first time we’ll be offering individual products instead of just bundles.

We are making filled bars now!

These are a hybrid format between a truffle and a bar. The deeper bar mold gives more room for added texture and special ingredients that we don’t necessarily have space to include in our truffles.

The larger size also means they are made for sharing or savoring over multiple sessions. It’s important to us that the fillings we use for this sort of bar are not overly rich or heavy. When I see the oversized Dubai-style bars all I see is overwhelm and too muchness.

As a concept though, the filled bar is a great vehicle. We’re excited to explore this format moving forward.

For this first recipe, it’s crispy peanut butter. We take our classic PB ganache and add ground up feuilletine (bits of flaky, baked sweet crepe) and a touch of vanilla syrup. It’s simple, with a great texture and just right level of sweet.

If there are any other fillings/added ingredients that you think would be a great fit- let us know! We’ve got a handful of ideas lined up, but your ideas are welcome too.

The Making of Mandorla (backwards)

This is our spiced almond butter truffle, a holiday favorite we only bring out for a short while around Christmastime.

It features a marzipan base with a nutmeg-spiced almond butter ganache.

Nutmeg never really gets to be the star of the show…until now!
