🍅 Farmers Market Roasted Vegetable & Burrata Platter

You know that farmers-market haul we talked about Monday?

**Here's what we're doing with it.** 🌿

Late-summer zucchini, squash, eggplant, peppers, tomatoes and red onion are roasted until caramelized, then piled onto a platter with creamy burrata, fresh basil and a generous drizzle of our **Traditional Aged Balsamic**.

Add some warm grilled sourdough and put the whole thing in the middle of the table.

That's dinner. Or an appetizer. Or something to nibble on with a glass of wine while deciding what's for dinner. 😉

And that's exactly how we like to cook this time of year—simple ingredients, very little fuss, and all those beautiful summer flavors doing most of the work.

Bought too much at the farmers market? We have ideas. 😂

You know how it happens...

You stop at the farmers market for a couple of tomatoes and somehow come home with tomatoes, zucchini, sweet peppers, eggplant, fresh corn, peaches, basil...and absolutely no plan for what to do with all of it. 😂

Mrs. Salty has you covered.

This week's featured flavor is one of the classics:

✨ Traditional Aged Balsamic

Rich, slightly sweet, beautifully balanced and incredibly versatile, a good aged balsamic may be one of the easiest ways to turn your farmers-market haul into something special.

Try it:

There's something special about late summer.

The farmers markets are overflowing with sweet corn, juicy tomatoes, fragrant basil, and ripe peaches. It's the season when the freshest ingredients don't need much—just a little inspiration.

This week's pairing celebrates everything we love about August around the table.

Garlic Parmesan Grilled Chicken with Summer Corn & Tomato Orzo

There's something about late summer dinners that just feels special. Fresh corn is at its sweetest, tomatoes are bursting with flavor, and dinner is best enjoyed outside with family and friends.

This easy meal celebrates the season with juicy grilled chicken, sweet corn, cherry tomatoes, fresh basil, and a generous drizzle of our Garlic Parmesan Extra Virgin Olive Oil.

Serves: 4
Ingredients
For the Chicken
4 boneless, skinless chicken breasts
¼ cup Salty Olive Garlic Parmesan EVOO
1 teaspoon Italian seasoning
½ teaspoon smoked paprika
Salt & freshly cracked black pepper
For the Orzo
1½ cups dry orzo
2 ears fresh sweet corn, kernels removed (or 1½ cups frozen corn)
1 pint cherry tomatoes, halved
¼ cup Salty Olive Garlic Parmesan EVOO
¼ cup freshly grated Parmesan
¼ cup chopped fresh basil
Zest of 1 lemon
Juice of ½ lemon
Salt & pepper to taste

Directions

1️⃣ Toss the chicken with Garlic Parmesan EVOO, Italian seasoning, smoked paprika, salt, and pepper. Let marinate for 20–30 minutes.

2️⃣ Grill over medium-high heat for 5–7 minutes per side, or until the internal temperature reaches 165°F. Let rest before slicing.

3️⃣ Meanwhile, cook the orzo according to package directions. Drain and return to the pot.

4️⃣ Stir in the sweet corn while the orzo is still warm. Add the cherry tomatoes, Garlic Parmesan EVOO, Parmesan, basil, lemon zest, and lemon juice. Season with salt and pepper.

5️⃣ Spoon the orzo into shallow bowls and top with sliced grilled chicken.

Finish with extra Parmesan, fresh basil, cracked pepper, and one last drizzle of Garlic Parmesan EVOO.

✨ Mrs. Salty's Tip: Add grilled zucchini or asparagus on the side and serve with warm crusty bread for an easy dinner that's perfect for lingering on the porch.

🍑 Blackberry Ginger Grilled Chicken & Peach Salad

Late summer is one of our favorite times to gather around the table. Sweet peaches, juicy blackberries, grilled chicken, and peppery arugula come together with our Blackberry Ginger White Balsamic for a salad that's fresh, colorful, and satisfying.

You'll Need

🥬 5 oz baby arugula

🍗 2 grilled chicken breasts, sliced

🍑 2 ripe peaches, sliced

🫐 ½ cup fresh blackberries

🧀 ¼ cup crumbled goat cheese

🥜 ¼ cup toasted pecans

🌿 Fresh basil leaves

Dressing

🫒 2 Tbsp Extra Virgin Olive Oil

🫐 3 Tbsp Salty Olive Blackberry Ginger White Balsamic

🧂 Salt & cracked pepper

Directions

Arrange the arugula on a large platter.

Top with grilled chicken, peaches, blackberries, goat cheese, toasted pecans, and basil.

Whisk together the dressing and drizzle generously just before serving.
