Our space in Davis Sq plaza was always intended to be a long-term popup / chocolate speakeasy. And its time has come to an end.We’re mostly offline for the summer like usual, then will be shifting to a different factory setup in the fall without a retail storefront. BUT we’ll still be in Somerville, still fully kosher, still stocked around town, still available by appointment, while also being better for our operations.Can’t wait to share the flavors and adventures! -Sarah

Winnowing a freshly roasted batch of our Chanthaburi, Thailand bean today! Winnowing separates the hull (shell) from the nib. These nibs will be refined down into our fruity and delightful sour Thai chocolate while the hull will help nitrate fix our herb garden! From tree to dirt, we love to minimize waste where we can!

Making cacao into chocolate! After about 24hrs refining our cacao nibs down into a liquid form we add the sugar! In this case organic cane sugar. This addition…and the next 24hrs of refining turn cacao and sugar into chocolate. Let the sugar day commence.

It’s a pouring day! 25lb of single-origin chocolate! Today I’m pouring our 70% CADESA Co-Op, San Pedro, Ivory Coast chocolate. What does 70% mean to us? It means that 70% of the whole is cacao solids, 28% is organic cane sugar and 2% is organic coco butter. That’s it.

You know what that means, these beauties are for you our dark dark chocolate lovers and sugar-free friends! Our first take “la petit noir” bar is made with our San Pedro, Ivory Coast cacao and is available in our factory store and by special request!
