Because I got several requests for the recipe.
Cheesecake Pudding
2 Sleeves of Graham crackers each broken into 4 pieces along the break lines.
4 3.2 oz boxes instant Cheesecake pudding mix
4 cups of heavy whipping cream (cold)
3 1/4 cups whole milk (cold)
16 oz bag of frozen berries, thawed but still cold (~an hour on the counter) {I use great value berry medley}
* In a 9x13 dish layout a single layer of quarted graham crackers until the bottom is covered.
* Whip/Mix together:
2 cups whipping cream
1 3/4 cups whole milk
2 pudding mixes
* Mix until get soft peaks that lightly hold their shape
* Scoop in dollops over graham crackers and spread out evenly to the edges.
* Add another layer of quarted graham crackers, pressing lightly into the whipped pudding
* Whip/Mix together
2 cups whipping cream
1 1/2 cups whole milk
2 pudding mixes
* Mix until get soft peaks that lightly hold their shape.
* Add the berries (inc the juice in the bag)and mix until you get soft peaks
* Scoop/pour and spread evenly over all to edges.
* Refrigerate at least 2 hours (preferably overnight)
* Serve Cold.
Alternates:
Banana Pudding Bars
Sub: nilla wafers for graham crackers, Banana Pudding mix for cheesecake pudding mix, and layer bananas over nilla wafers instead of adding berries
Chocolate Pudding Bars
Sub Oreos for graham crackers, chocolate pudding mix for cheesecake pudding mix, and sprinkle mini chocolate chips over the top instead of adding berries
Eclair Pudding Bars
Use the Graham crackers
Sub French vanilla pudding mix for cheesecake pudding mix
Leave out the berries
Do a top layer of the graham cracker
Melt together 2 bags of milk chocolate chips, 2 Tbsp of butter, and a 1/2 cup of evaporated milk (can sub whole milk but won't be as rich). Then pour and spread evenly over the top before refrigerating.
