Try this delicious Collagen Pumpkin Pie.
Easy to make and healthy!
Ingredients
For the Crust:
2 cups almond flour
1 Scoop of Offernova's Hydrolyzed Collagen Powder
1/4 cup coconut flour
1/2 cup coconut oil, melted
1 egg
1 tablespoon honey
1/4 teaspoon salt
For the Filling:
1 can (15 oz) pumpkin puree (not pumpkin pie filling)
1 Scoop of Offernova's Hydrolyzed Collagen Powder
3 eggs
1/2 cup almond milk
1/3 cup honey or maple syrup
1 teaspoon vanilla extract
2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon salt
Instructions
For the Crust:
Preheat your oven to 350°F (175°C).
In a large bowl, combine almond flour, coconut flour, and salt.
In a separate bowl, whisk together the coconut oil, egg, and honey.
Combine the wet and dry ingredients to form a dough.
Press the dough into a 9-inch pie pan, evenly covering the bottom and sides.
Bake for 8-10 minutes, until slightly golden. Remove from oven and let cool.
For the Filling:
In a large bowl, whisk together the pumpkin puree, eggs, almond milk, honey/maple syrup, vanilla extract, cinnamon, ginger, nutmeg, cloves, and salt until smooth.
Pour the filling into the cooled crust.
Bake for 45-50 minutes, or until the filling is set and a knife inserted near the center comes out clean.
Allow the pie to cool completely, then refrigerate for at least 2 hours before serving.
