🥞: I’m a creature of habit. I’ve been asked before about what I eat everyday. At the time when I worked nights, oatmeal was hands-down my favorite thing to eat. But as the pandemic continued, I realized I needed to change my breakfast game up just a little to pretend that I was out traveling and exploring new cuisines.
My new go-to breakfast? Crispy scallion pancakes (shou zhua bing #手抓饼). But with a twist. I make them into tacos and fill them with layers of yummy savory pork floss, gooey egg, micro greens, and lots and lots of chili oil.
I introduced my parents to this creation when I was home and to my surprise, they were genuinely impressed. *pats self on back*
The trick? To have a super crispy and flakey scallion pancake with a lot of layers to give you that perfect crunch and flavor when you take that first bite. Anything else is just not the same.
