Our team has been pretty busy lately (see image 3 for one of our two walls of chocolate — those are 25lb blocks each!) but we’ve also been obsessed with our newest flavor: 80% Puerto Rico.

Made entirely from beans grown at Hacienda Jeanmarie, and it might be one of our favorite things we’ve ever made.

THE STORY BEHIND THE BAR
In 2009, a man named Juan Echevarría decided to try his hand at farming on a 2.5-acre plot of land in Puerto Rico — no experience, no guarantees. He spent years developing unique cacao clones, trained hundreds of local farmers, and helped plant over a million cacao trees across the island. Today, Hacienda Jeanmarie sources from more than 100 small farms practicing agroforestry, with cacao growing alongside guava, pineapple, soursop, and banana. It’s a genuinely remarkable origin story — check out The Chocolate Professor for a deeper dive.

TASTING NOTES
We tasted this bar together as a team and couldn’t stop reaching for another piece. What we found: hazelnut and cocoa up front, a toasted bread quality that’s really something special, and a gentle floral note that lingers at the end. Rich and grounded, with just enough brightness to keep you coming back.

Thank you so much to all of our customers who have continued to support our growing business. This year has been wild. We’ll do a full recap of the craziness soon but for now, our team is taking some time off for a much-deserved break.

We will be closed December 25th through January 1st to let our crew rest, recharge, and spend time with loved ones.

Holiday truffles have arrived! And just in time to share them (or not) at Thanksgiving. Expiration date is January 5th so these will last a while…assuming they don’t get eaten immediately :)

We made this its own six-piece box because these truffles are incredible. Toasted hazelnuts blended with our 58% Oat Milk chocolate become a rich gianduja. All of that is folded with chopped caramelized hazelnuts for crunch and finished with a touch of sea salt. Simple and incredibly addictive. (And vegan friendly!)

We’re excited to share our newest bar: 70% Puerto Rico with Urfa Biber.

Urfa Biber is a chili from southeastern Turkey, where it’s sun-dried by day and wrapped at night to “sweat,” deepening its color and flavor. The result is a pepper that’s smoky, rich, and slightly fruity — more raisin than fire. It brings a slow, gentle warmth that complements chocolate beautifully.

Unlike our Ghost Chili or Habanero bars, this one isn’t about heat. It’s about depth, balance, and the way those subtle flavors unfold with each bite.

We debuted it last weekend at the Northwest Chocolate Festival, where it quickly became our second most popular flavor, right behind our longtime favorite, 70% Belize with Bourbon.

It’s a flavor we’ve been excited to share — there’s nothing quite like it in our lineup.
