The FSN Pilot Plant is one of the only university-based food production programs where students work with departmental staff to design and produce commercially sold food items. Cal Poly Chocolates is an organization that employs many Food Science and Nutrition students on Cal Poly's campus. Chocolates, along with Jars (BBQ Sauce and Jam) is supervised by FSN operations manager Molly Lear. Through
this organization, students develop, create, package and market chocolate products using fair trade chocolate. Chocolates are sold in Central Coast markets, on campus at Campus Market El Corral bookstore, Village Market, and by special order at almost 70 locations.
