Strawberry Shortcake
Ingredients
2 cups all-purpose flour
1/4 cup sugar
1 tbsp baking powder
1/2 tsp salt
1/2 cup unsalted butter (cold, cubed)
2/3 cup heavy cream
1 lb fresh strawberries (sliced)
2 tbsp sugar (for strawberries)
1 cup whipped cream
Method
Mix flour, sugar, baking powder, and salt. Cut in cold butter. Add heavy cream and mix just until dough forms. Shape and bake at 400°F for 15–18 minutes. Toss strawberries with sugar and rest 20 minutes. Split shortcakes, fill with strawberries and whipped cream.
Chocolate Chip Muffins
Ingredients
1 1/2 cups all-purpose flour
3/4 cup sugar
2 tsp baking powder
1/2 tsp salt
1/3 cup oil
1/2 cup milk
2 large eggs
2 tsp vanilla extract
1 cup chocolate chips
Method
Mix flour, sugar, baking powder, and salt. Whisk oil, milk, eggs, and vanilla. Combine wet and dry ingredients, fold in chocolate chips. Fill liners 3/4 full. Bake at 350°F for 18–22 minutes.
Apple Turnovers
Ingredients
1 sheet puff pastry
2 cups apples (peeled & diced)
1/4 cup sugar
1 tsp cinnamon
1/2 tsp lemon juice
1 tbsp flour
1 egg (beaten, for egg wash)
Glaze
1/2 cup powdered sugar
1–2 tsp milk
Method
Mix apples with sugar, cinnamon, lemon juice, and flour. Cut puff pastry into squares, add filling, fold and seal. Brush with egg wash. Bake at 400°F for 20–25 minutes until golden. Mix glaze and drizzle over cooled turnovers.
