What is a Cocoa Nib?
Cocoa Nibs are pieces of roasted Cocoa beans-they are pure chocolate.
Crunchy, chocolaty, but they are not sweet. Premium Cocoa nibs will have a pleasing bitter taste, a lower quality Nib will be overly bitter and lack the bold chocolate flavor. When added to a chocolate couverture bar it adds an nice crunch and rich chocolate flavor.
