Did 4 8lb pork shoulders on Pit Boss 850 Pro Series. Used blend of PB Competition Blend and Applewood pellets. Removed fat back on all four shoulders and used Meat Church Hog Injection. Used 2 different recipes split between the group. 2 started with Meat Church Holy Gospel and the other 2 had a Charleston BBQ Rub. Started PB at 230 degrees for 6 hours, then increased to 270 to get through a stall for an additional 3 hours. I then removed and applied additional seasonings. On the Meat Church shoulders, I applied Meat Church Hot Honey Hog, brown sugar, and butter. On the Charleston shoulders, I applied a KC Rub, brown sugar, butter, and honey. Wrapped in pink paper and put back on PB at 300 for an additional 2 1/2 hours. Probe Tender 205 and removed, wrapped in towels and then put in a cooler for 1 hours. Bones came out clean on all four!
