Every once in a while, we get asked to pull a rabbit out of a hat.

One of my regular customers brought me 6 hams that were done very poorly (not from my shop) last year and asked if I could do anything to salvage the meat.

I told him I wasn’t sure, it’s pretty difficult to turn water into wine nowadays, but I told him is give it a shot.

So after thawing the hams out, they were worse than he even described. Almost zero flavor, skin left on to smoke (a huge pet peeve of mine, I think it’s lazy and doesn’t give your ham no where near as good flavor) and very poor brine pe*******on.

After deboning, cleaning up and chopping up, we ended up with 30lbs of minced ham.

Now what? Well, we had discussion with my shop guy the other day about a potential to turn it into hash, so since we were given 100% autonomy to try and bring this back to life, I figured ‘why not!’ And we gave it a whirl.

I took 20lbs of Yukon gold potatoes, par boiled them, mom chopped 5lbs of tri-colored bells and red onions, and a little bit of breakfast sausage seasoning. Mixed the seasoning into the meat and spuds and ground it through the most coarse plate I have for my grinder and then mixed in the veggies.

And wala! Well turned water into wine!!!

We took a product that was bound for the dumpster and turned it into 50lbs of delicious meals.

Even still today, I sometimes amaze myself!

When I experiment, it’s 100% sink or swim, it’s either so bad the dogs won’t eat it, or it’s delicious. Thankfully this one was the latter and we still have a customer coming back for more and more.

We have a 1/4 and a half beef hanging in the locker that the rancher had buyers back out on so they are available.

1/2 $2100 plus Cut & Wrap fee
1/4 $1050 plus Cut & Wrap fee.

The 1/2 will be cut Sunday and ready for the freezer by Tuesday. Still time to get it cut your way.

The quarter will be cut tomorrow and will be ready by Saturday.

Well.

After a whole bunch of excitement yesterday and today, we got the carpet pulled out from under us this afternoon.

I don’t fully understand the reasoning, but we were informed that we will NOT be on the list for Shasta District Fair this weekend.

This is very disappointing, but rather than feel sorry for ourselves, we are just putting our head down and moving forward.

Things happen for a reason and we don’t always understand what that reason is, but I’m gonna trust and have faith that things are exactly how they are supposed to be.

Doesn’t make it less disappointing though.

He did tell us that we have plenty of time to get on the fair list for Trinity County and MacArthur Fairs so we shall see.
