Ingredients:
Skewers
🦐Paul Piazza Wild Caught Gulf Shrimp 50/70 Peeled and Deveined or 43/50 Headless, 1 lb $5.99
🍍Pineapples $2.99/EA
🍋3 limes (juice and zest)
🍯2 tbsp SimplyGO honey, $3.79
🌶️1 tbsp sambal
🫒2 tbsp olive oil
🧄1 tsp garlic
🧂1 tsp sea salt
⚫½ tsp black pepper
🫙1 tsp garlic powder
Mac Salad
🥫2½ cups Best Foods Real Mayonnaise, 20–30 oz Assorted varieties $2.99
🍝1 lb SimplyGO macaroni, $1.19
🍎2 tbsp apple cider vinegar
🥕2 carrots, shredded
🧅¼ cup shredded onion (optional)
🥛¼ cup milk
🍬2 tsp sugar
🧂salt & pepper, to taste
Instructions:
1️⃣Cook macaroni according to package directions. Rinse under cold water, drain well, and toss with vinegar, carrots, and onion. Refrigerate for 15 minutes.
2️⃣Whisk together mayonnaise, milk, and sugar. Fold into the macaroni and season with salt and pepper to taste. Cover and refrigerate for at least 4 hours (overnight is best).
3️⃣Soak wooden skewers in water for 30 minutes. Whisk together lime juice, honey, sambal, garlic, olive oil, sea salt, black pepper, and garlic powder.
4️⃣Thread shrimp and pineapple onto skewers. Reserve half the glaze and brush the remaining glaze over the skewers.
5️⃣Grill over medium-high heat for about 2 minutes per side, or until the shrimp are pink and cooked through. Brush with the reserved glaze before serving.
6️⃣Serve the grilled shrimp and pineapple skewers alongside the chilled Hawaiian mac salad and enjoy!
