Know how to sharpen everyday knives? Ready to take things to the next level? Take our Single Bevel Sharpening class on May 26 (12:30pm-3:30pm) under expert guidance! Sign up using the link below.

We'll start with setup and onboarding, then we'll cover safety norms and core concepts of single bevel anatomy, construction, and edge profiles like the micro-bevel and hamaguri.

Participants will learn to “take a reading” by checking straightness and geometry, identify and correct bends safely, and confirm observations on the stone, then build a sharpening plan that prioritizes flattening the back and wide bevel before optional polishing, adding a micro-bevel, de-burring, and finishing with fine-stone work, stropping, testing, and Q&A.

The magurobocho is a sword-like Japanese knife designed specifically for filleting large bluefin tuna. This model by Sakai Takayuki has sustained an unfortunate chip. Let's do something about that!
