King's Day is coming up ( opposite to No Kings Day but we kinda do like our guy), a massive Dutch national holiday celebrated on April 27th to mark King Willem-Alexander's birthday. Known as the world's biggest birthday party, the nation unites in wearing orange to celebrate with nationwide flea markets, canal boat parties, live music, and festivals.

Gouda! The city is famous for two things, of course the famous cheese and the stroopwafel. The first Stroopwafel was made here around 1830.

In the world of Dutch treats, few snacks have a story as charming and unexpected as the stroopwafel. Long before it became a global coffee-cup companion, it began in the 18th century in the city of Gouda — not as a luxury snack, but as a clever way to avoid food waste. Bakers collected leftover crumbs, scraps, and broken biscuit pieces, pressed them together into a thin waffle, and glued the layers with warm, sweet syrup. What started as a treat for the working class quietly evolved into a national icon.

Over time, recipes improved, quality rose, and the humble “poor-man’s cookie” transformed into the golden symbol of Dutch sweetness. Today, stroopwafels are sold everywhere: weekly markets, supermarkets, bakeries, airports, and even street stalls where they are still served fresh, warm, and oozing with syrup — the original, unbeatable experience.

The best part? Dutch culture turned it into a ritual: place your stroopwafel on top of a hot cup of coffee or tea, let the steam soften the inner syrup layer, and enjoy the perfect blend of crispy, chewy, buttery, and caramel-sweet. From old Gouda bakeries to international gift shops, the stroopwafel proves that even simple beginnings can become a beloved tradition.

A brilliant idea
A national habit
