A few updates from The Butcher & The Baker
Hunting season is among us so we're changing Sunday hours starting this Sunday.
SUNDAY HOURS ARE NOW 12PM-5PM.
Now about our downtown plans since we've been asked and already told a few— we've decided not to move forward with a sit-down bakery/eatery location downtown.
We were excited about the idea and had a lot of fun planning what we could bring to that part of town. But part of doing your homework before making a big investment is paying attention to everything — the numbers, the environment, and yes, even some of the things you hear along the way. Not every table needs our chair at it.
What really made us pump the brakes were the numbers.
When you hear monthly sales numbers from a few businesses that look more like a slow week at the Red Barn, spending tens of thousands of dollars to open another brick-and-mortar starts looking a whole lot less exciting. The lease payment, the utilities, the second location staff just eats away at what you plan. That's not a criticism of anyone. It's information — and good business owners use the information they have before writing big checks. Most people don't start something new just so they can say they have something new for a short time.
So we took another look at what we were actually trying to accomplish with a sit-down eatery and realized we can accomplish a whole lot of it right here.
We're going to bring many of the things we had planned downtown to the Red Barn instead — more food, more bakery and more of the ideas we've been wanting the room to do. And we're going to build our own commercial kitchen. We already own the land. It's outside the floodplain. There's not even a foundation yet, so it's going to take some time. 😂 But when it's built, it'll be ours.
We don't own the Red Barn building, but we know whats been built inside of it. We'd rather continue feeding a location that's already busy while putting our major investment into property we own.
We don't regret looking downtown. It actually helped us figure out what we want next.
Same money. Same ambition. Better plan. More at the Red Barn. More room to make it. And a building of our own behind the scenes.
The difference is that instead of putting the biggest part of that investment into another storefront, we'll put it into our own property. It'll take longer this way, and that's fine. We're not in a hurry to have two locations. We're in a much bigger hurry to make sure the decisions we make today still make sense ten years from now.
For us, this one does right now.
