Yesterday being a travel day I didn't do my normal post. Here is day 9 and 10.

Day 9 (3meals)
Breakfast: homemade blueberry muffins and cinnamon muffins.

Lunch: macaroni and cheese

Dinner: My son got to have authentic mexican food with his friends 🌮 however at home I cooked sausage with peppers and onions over rice.

Day 10: 3 meals
Breakfast- We have officially run out of eggs so we had leftover muffins and cereal before we hit the road!

Lunch: French toast casserole 😋 delicious any time of day!

Dinner- grilled chicken with leftover rice.

We still have a few meals left! I am going to start preparing for another shopping trip though! ☺️

Breakfast: fried eggs with nutritional yeast and a small bowl of cereal

Lunch: spinach and cheese manicotti with a side salad

Dinner: chicken and stuffing casserole with green beans.

Still trucking on the original $200.

Day 7 (3meals- 20 total so far)

Breakfast- scrambled eggs with left over scallop potatoes and ham mixes in- sounds weird? It was delicious!!

Lunch- fridge cleanout- leftovers buffet!!

Dinner- ground pork and lentil tacos!!
Lentils are amazing- if you haven't tried them yet, get on it!!!

So far with spending $200, I have made 20 meals- That's about $10 per meal or $2.50 per person.. and I still have lots of groceries to use up!!

Happy Monday!! After school work today and every Monday, I take stock of my stores... I check what I am running low on, what I have in the veggie drawer that is looking like it needs eaten up quickly, what leftovers I am accumulating and re-evaluate my weekly menu! I often throw in a leftovers meal but I still sometimes end up with a few containers in my fridge and I don't want it to come down to having to trash them. I may have to change my weekly menu just a tweak to accommodate for the additional leftovers I have or to use up the veggies that are needing to be used before they are past their prime.
Throwing food in the trash is not saving me any money so I do everything I can to make sure that doesnt happen.

Because I have challenged myself to see how far my last shopping trip can last me, I won't go shopping this week but I still want to keep an eye on my pantry and make sure I don't run us down to "nothing". Part of saving money is budgeting and if you are constantly depleting all your pantry items and having to refill, you will spend more money in the long run.
Watch for sales on the items you use alot of! If you have the extra in your budget that week, grab a few of them for later use.

Breakfast: today we had raspberry oatmeal with added yogurt and eggs on the side.

Lunch: Homade pizza- yummy, one of our favorites!!

Dinner: scalloped potatoes and ham

Another tip for healthy eating.... dont snack throughout the day, drink lots of water and with your meals drink water with lemon and ACV (apple cider vinegar)

Day 5 (3meals bringing the total to 14 so far)

Breakfast: Saturday mornings are sometimes a free-for-all breakfast day and that's how it went this week. We had a mix of cereal, raspberry oatmeal with yogurt, and egg omelet with fruit.

Lunch: baked chicken strips (cut chicken breast into strips, bread and bake, easy-peasy) and handcut fries. 🍟

Dinner: chili and cornbread. (Even though it was 70 degrees outside 🤣) I made my chili using the italian sausage. It not only tastes better than beef but if you haven't noticed already I try to avoid red meat. I just dont like it, and I'm the cook so what I say goes!🤣🤣)

Day 4 (3 meals)
Breakfast: skillet meal- diced potatoes, sausage and eggs 🥚seasoned with onions and fresh garlic. One of our households favorites. All cooked in one pan in 20 min.
Here I used 2 of the italian sausages, cut the casing off and let the sausage cook into a crumble.

Lunch: red lentil pasta 🍝 with a creamy pumpkin sauce and topped with diced grilled chicken. Side salad and fruit.
Pumpkin is a very nutritious fruit. 🎃 I use it alot in baking as a butter and oil alternative. I will also use the sweet baking pumpkin so I can eliminate the sugar or decrease the amount drastically.

Dinner: rice noodles topped with stir fried veggies, a side of sliced cheese with crackers and a no bake cookie for dessert! 🍪

Getting kids to eat lots of veggies is most of the time a tough task. You have to just stick with it. Make them at least continue to try every meal you cook. Stir fry is not one of my kids favorites but adding the rice noodles (although not as healthy as an all veggie meal) helps them mix up all the delicious flavors with a hardy noodle. I also like this meal with rice in place of the noodles.

Breakfast: pumpkin pancakes and diced peaches

Lunch: chicken salad flatbread (homemade flatbreads) sandwhiches with lettuce, tomatoes and onion.

Dinner: Venison stroganoff and side salad.

None of these meals took me more than 20min to prepare!!

I split a pack of 3 boneless skinless chicken breasts up into three meals or 1lb of ground pork into 2 meals.
