The main item produced is a fresh-onion rolll, known as the “Miami Onion Roll”. Additional frozen items include Rosemary focaccia, challah bread, pepper-fennel rolls, knot rolls, pizza dough, hotdog rolls, hamburger buns and p***a bread. The facility operates an average of twenty four hours a day, five days a week. Manufacturing and sanitation takes place daily. A work force of 60 employees are em

ployed at this facility and turnover is regulated by seasonal demands. Processing controls have been put into place in order to optimize product safety and quality. Prerequisite programs managed at this facility include: GMP’s , HACCP, Chemical Control, Sanitation, Supplier Control, Personal Training , and Product Trace ability and Recall.
