I've been on a bit of a hiatus from mushroom growing since
Christmastime. And now, looking at this beauty is giving me some serious cravings.
It's so satisfying & toothsome! Nutty, crunchy, meaty. The flavours of Lion's Mane
are memorable. Familiar, yet distinct.
The texture is similar to crab or lobster when cooked in a patty. But closer to meat when breaded or fried.
Also delicious when dried and used as a seasoning or to add umami to soups, stews & vegetable dishes.

Time to make some blocks!

Happy New Year mushroom lovers 🍄 🥂
I’ve discovered a wonderful thing. Stuffing waffles! That’s right~ with built in nooks & crannies to hold the gravy!
I’m so excited about it 🤗 I used my regular stuffing recipe with a good handful of lion’s mane mushroom, of course. I added some egg to bind it y voila!

I can’t take credit for the idea. I found it while looking up savoury waffle recipes. But, man, it’s the bomb. Especially with the gravy leftover from the slow cooked lamb shanks we had last week.

Mushroom Schnitzel 😋
I’ve discovered a new & delicious way to eat my lion’s mane mushrooms! Soooo good!!

It was the first, but definitely not the last time I make mushroom schnitzel. With a squeeze of lemon juice, these were meaty, crispy & very satisfying. I pan seared the thinly sliced lion’s mane mushrooms first till they had a bit of colour & lost some of their water. Then did the usual flour, egg & breadcrumb treatment you would use for schnitzel.
This will be added to my favourite lion’s mane recipes 🍄 💚

The pheasant back mushrooms were delicious sautéed with butter & salt. I tried them on their own before throwing them in scrambled eggs.
Their texture is firm, but yielding. Nutty, umami flavour, earthy

Think I’m a convert. Next batch will be served with pasta..

Found some pheasant back mushrooms growing in a Glen behind our house.
Caught some young enough to still be tender.
They say 6cm or less. It’s my first time trying them, so I’ll just have a bit to see if I have a reaction,
Will let you know how they taste. Some people love ‘em & others say meh….. we will see shortly
