So let's talk maple syrup that we carry at our shop. We have a local artist that strives to bring quality fire boiled syrup with some of the lowest prices around. Curious about the difference between amber-rich and dark-robust syrup? Many people think darker maple syrup is "stronger" or lower quality—but that's not the case! Both Amber-Rich and Dark-Robust syrups are pure maple syrup, just with different flavor profiles. Amber-rich (formerly Grade A Medium) is the universal syrup, perfect for pancakes, waffles, yogurt, and general sweetening. It's lighter in color and has that classic smooth maple flavor. Dark-robust (formerly Grade A Dark) has a much deeper and richer maple flavor. It's excellent for coffee, marinades, dressings, and baked goods, or for anyone who truly loves that bold maple taste. They both have the same sugar content; the darker color generally comes later in the sugaring season when there is more bacteria and yeast due to warmer temperatures. These organisms break down the glucose into simpler sugars, which caramelize more when heated, resulting in a darker color and bolder flavor.
