Unlike most of the cocoa beans we encountered these Ecuadorian 'Large Flowered' beans were the most difficult to extract the nibs as they fell apart easily inside. One customer said: was the most splendid chocolate he ever tasted. It took nine and a half hours to hand-shell 68 oz of beans.
