Just made this delicious chia seed jam/compote for my granola and yoghurt this morning. 1 cup frozen fruit cooked with big squeeze of lemon juice for 8-10 mins. Add xylitol to taste then stir in a spin of chia seeds. Yum. I reckon it will keep for a few days and I’ll put it on toast for kids’ sugarfree snack later.
