HONEY GARLIC CHICKEN BITES OVER CREAMY RICE
Ingredients:
1½ Ibs boneless, skinless chicken breasts, cut into bite-sized pieces
2 tbsp olive oil
Salt and black pepper, to taste
½ tsp garlic powder
5 cloves garlic, minced
¼ cup honey
2 tbsp soy sauce
1 tbsp apple cider vinegar
1 tbsp butter
For the Creamy Rice:
1½ cups jasmine or white rice
3 cups chicken broth
1 cup heavy cream
1 cup shredded mozzarella cheese
½ cup cream cheese, softened ½ cup grated Parmesan cheese
1 tbsp butter
Salt and pepper, to taste
1 tsp Italian seasoning Fresh parsley, for garnish
Directions:
In a large pot, add rice and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until the liquid is absorbed and rice is tender.
Once rice is done, stir in butter, heavy cream, cream cheese, mozzarella, and Parmesan. Stir until everything is melted and creamy. Season with salt, pepper, and Italian seasoning. Keep warm.
While the rice cooks, heat olive oil in a large skillet over medium-high heat. Season chicken bites with salt, pepper, and garlic powder. Sear the chicken until golden and fully cooked, about 12-15minutes.
Push the chicken to the sides of the skillet and add butter and minced garlic. Sauté garlic for 30 seconds, then pour in honey, soy sauce, and apple cider vinegar. Stir everything together and simmer for 2-3 minutes until thick and sticky, coating the chicken.
Spoon the creamy rice onto plates and top with honey garlic chicken bites. Garnish with parsley.

Sweet Macaroni Salad
Ingredients:
🍝 1 package (16 ounces) elbow macaroni
🥕 4 medium carrots, shredded
🌶️ 1 large green pepper, chopped
🧅 1 medium red onion, chopped
🥄 2 cups mayonnaise
🥛 1 can (14 ounces) sweetened condensed milk
🍎 1 cup cider vinegar
🍬 1/2 cup sugar
🧂 1 teaspoon salt
🌶️ 1/2 teaspoon pepper
Directions:
🍝 Cook the Macaroni: Boil the elbow macaroni according to the package directions until al dente. Drain and rinse with cold water to cool it down. Ensure the pasta is well-drained.
🥕 Prepare the Vegetables: In a large mixing bowl, combine the cooked macaroni, shredded carrots, chopped green pepper, and chopped red onion.
🥄 Make the Dressing: In another bowl, whisk together the mayonnaise, sweetened condensed milk, cider vinegar, sugar, salt, and pepper until the sugar is fully dissolved and the dressing is smooth.

Crinkly Crackly Butter Toffee Sugar Cookies
Ingredients:
1 cup unsalted butter, softened
1 ½ cups granulated sugar
1 large egg
1 tbsp vanilla extract
2 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 ½ cups toffee bits
Extra sugar for rolling
Instructions:
Preheat the oven:
Set oven to 350°F (175°C). Line baking sheets with parchment paper.
Make the dough:
In a large bowl, cream the butter and sugar until light and fluffy. Add the egg and vanilla; beat until smooth.
In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet, mixing just until combined. Fold in the toffee bits.
Shape and coat:
Scoop dough into 1-inch balls and roll in granulated sugar. Place them 2 inches apart on the prepared baking sheets.
Bake to perfection:

Strawberry Cheesecake Bars
Ingredients:
Crust
2 cups graham cracker crumbs
2 tablespoons granulated sugar
4 tablespoons salted butter melted
Cheesecake
16 ounces cream cheese softened
3/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
Strawberry Filling
3 cups chopped strawberries
2 tablespoons lemon juice
1/2 cup light brown sugar packed
1 teaspoon vanilla extract
1 1/2 tablespoons cornstarch
Oatmeal Crumble
1 cup old fashioned oats
1 cup light brown sugar packed
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
6 tablespoons unsalted butter cold and finely diced
Directions:
Preheat the oven to 350 degrees Fahrenheit. Line a 9 by 9 inch baking pan with parchment paper and set aside.
Combine graham cracker crumbs and sugar in a medium bowl and make a small well. Pour in the melted butter and mix until evenly combined.
Transfer the crust mixture to the prepared baking pan and press evenly into the bottom of the pan. Bake for 8 minutes.
While the crust is baking, beat together the cheesecake ingredients in a medium bowl until smooth and creamy and set aside.
Add the strawberries, lemon juice, and vanilla to a medium saucepan. Cook over medium high heat for 5 to 7 minutes until the strawberries are bursting and juice has started to form.
In a separate bowl, combine the brown sugar and cornstarch. Stir into the strawberry mixture and cook for an additional 2 minutes, stirring constantly, until the mixture thickens and resembles pie filling. Remove from heat.
Make the oatmeal crumble by combining all of the crumble ingredients in a large bowl. Use a pastry cutter or your fingers to mix until you have a coarse crumble.
Pour the cheesecake mixture over the baked crust and spread evenly. Top with the strawberry filling. Sprinkle the crumble topping over the strawberries.
Bake for 50 to 70 minutes until the crumble topping is golden brown. Remove from the oven and let cool in the pan on a wire rack for 30 to 60 minutes. Transfer to the refrigerator to chill for at least 4 hours or preferably overnight before slicing into squares.

Bowtie Pasta with Creamy Lemon Garlic Chicken & Parmesan
Ingredients:
1 lb boneless, skinless chicken breasts, sliced into strips
1 teaspoon salt
1/8 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Italian seasoning
2 tablespoons olive oil
3 cloves garlic, minced
Zest and juice of 1 lemon
1 tablespoon butter
For the Bowtie Pasta:
8 oz bowtie pasta
2 tablespoons butter
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup chicken broth
1/2 teaspoon salt
1 pinch pepper, to taste
Fresh parsley, chopped (garnish)
Directions:
Start by cooking the bowtie pasta in a large pot of boiling salted water until just tender
Once done, drain and set aside. Save a little pasta water in case you want to loosen the sauce later.
While the pasta cooks, season the chicken strips with salt, pepper, garlic powder, onion powder and Italian seasoning. Heat olive oil in a skillet over medium-high heat and add the chicken. Let it sizzle for about 6-7 minutes on each side until it's golden brown on the outside and fully cooked inside.
Add minced garlic to the skillet and cook for 1 minute. Then stir in the fresh lemon zest and juice. Add a tablespoon of butter, letting it melt and coat the chicken in that zesty, garlicky goodness. Turn off the heat and set the chicken aside.
In the same skillet, melt the remaining butter. Pour in the heavy cream and chicken broth, stirring as it begins to simmer. Let it cook for 2-3 minutes to thicken slightly.
Once the cream sauce is ready, stir in the Parmesan cheese until fully melted and silky. Season with salt and pepper to your liking.
Add the cooked pasta into the sauce and toss gently to coat each piece. If the sauce needs thinning, splash in a bit of that reserved pasta water. Fold in the lemon garlic chicken and stir to combine everything evenly.
Spoon the pasta onto plates or into bowls, and top with a sprinkle of fresh parsley and extra Parmesan.

Peanut Butter Sheet Cake with Peanut Butter Frosting
Ingredients:
1 box yellow cake mix
4 eggs
1/2 c softened butter
1 c water
1/2 c creamy peanut butter
FROSTING:
3 c confectioners' sugar
1/2 c creamy peanut butter
1/2 c softened butter
2+ tbsp milk
1 tsp pure vanilla extract
Directions:
Preheat oven to 325°F. Lightly grease 9 X 13 baking pan and set aside.
Using an electric mixer, cream the butter and peanut butter until well incorporated. Add eggs, cake mix, and water and beat on medium for two minutes. Pour into greased baking dish and bake for 40 minutes or until toothpick comes out clean. Cool completely before frosting.
Frosting: Cream the butter and peanut butter until well incorporated. Add confectioners' sugar, extract, salt, and 2 tablespoons of milk and continue to mix until the frosting is nice and fluffy. You may need an additional tablespoon (or more) of milk if the frosting is too thick

1 box angel food or yellow cake mix
1 can (15 oz) lemon pie filling
Instructions:
