In Hawaii, Spam is so popular that it is sometimes referred to as "The Hawaiian Steak". There is even an annual Spam-themed festival on the island of Oahu each spring, known as the "Waikiki Spam Jam"!

Barbara Funamura, a Japanese-American woman from Hawaii, is credited with having invented Spam musubi, a slice of grilled Spam on top of a block of rice, wrapped together with nori. However, the true root of the island's love for SPAM products goes back to World War II, when the luncheon meat was served to GIs.

In the Hawaiian creation story, the octopus is an alien that survived from a previous universe!

Known as he'e or tako, octopus is a staple dish in Hawaii cuisine thanks to many an Asian influence. The ancient Hawaiian God, Kanaloa (deity of the ocean), had several body forms that he could manifest into, but is most associated with the octopus.

Kombu?

For the second course at our Rice is Life benefit, Chef Chris Hamm is bringing us an ingredient that might not be familiar to everyone.

"Kombu is an edible sea vegetable from the brown algae family. It's similar in flavour to Nori seaweed and contains many of the same vitamins and minerals, however, nori is seaweed and Kombu is kelp. Most Kombu is harvested in the seas of Korea and Japan, mainly coming from Hokkaido, an island in northern Japan." -

Being briny and vegetal in flavor, kombu can be eaten, but it's often used to make rich, savory broths. When dried, kombu can add a light crunch to your dish of choice.

A situation we know all too well...

A story falling out of the news cycle doesn't mean the problem was solved. Being in a constant state of "out of sight, out of mind" is a product of how our media works. While there may be very few reports of the wildfires that ravaged parts of Maui last year, people's lives are still upended and families continue to struggle.

On Monday, January 15th, Oryza is joining forces with Chef Chris Hamm in hopes of raising $1000 for hospitality workers in Lahaina. I'm addition to food and drinks there will be karaoke! We hope to see you there if you're available and if not, please share with folks that might be interested!

As we very well know, just because something has fallen out of the news cycle doesn't mean the problem was solved. Oryza is joining forces with Filipino Hawaiian Chef Chris Hamm to raise $1000 for hospitality workers affected by the Lahaina fires on Maui last year. There will be food, drinks and karaoke!
