If your garden is currently producing more squash than your family can possibly eat… we’ve got an idea 🌱
Crispy bread, whipped lemon ricotta, and fresh grilled summer squash piled on top. It’s simple, fresh, and ridiculously good.
Ingredients:
1 Zucchini, Chopped
1 Yellow Squash, Chopped
Lane’s BBQ Spellbound Seasoning
Olivelle Sicilian Lemon Infused Olive Oil
Red Wine Vinegar, Splash
8oz Ricotta Cheese
1 Lemon
1 tsp. Fresh Cracked Black Pepper
French Bread, Sliced
Butter
Instructions:
Season zucchini and squash with Spellbound seasoning, lemon olive oil, and a splash of red wine vinegar.
In a saucepan over medium low heat, add ricotta, 1/2 lemon juiced, and black pepper to taste. Stir until smooth and warmed through, then set aside.
Set your grill to 450°F with the Eggspander basket holding your grill basket over direct heat. (If you don’t have the Eggspander, place your grill basket directly on the coals.) Grill the veggies with the lid open, tossing frequently until they get that perfect char.
Once off the grill, toss them again with a bit more seasoning, a splash of red wine vinegar, the other 1/2 lemon juiced, and pepper.
Butter one side of each slice of bread. Place non-buttered-side-down first to melt, then flip and grill buttered-side down to get that crispy, golden crunch.
Spread your lemon ricotta mixture on the non-buttered each piece of toast. Top with grilled veggies. Enjoy!
