Looks the weather is going to bring our season to a close in the next couple days but we have the evaporator running hard tonight!

We’ve got a nice boil going tonight making more of our fresh sap into Mother Nature’s golden sweetener.

One of the common questions we get is: “How much sap does it take to make a gallon of syrup?” The answer is determined by the amount of sugar in the sap. Different trees have varying sugar content. It is not specific to the of type of maple (i.e. Sugar, Silver, Red, Norway, Box Elder, etc). Different trees of the same type have different sugar content. The sugar content changes as the season goes on. Each day we test the sap using a hydrometer as it comes into the Sugarhouse. We just tested today’s sap and it is at 2%. At 2% it will take 43 gallons of sap to make 1 gallon of syrup.
