This is the last weekend of May. Seems like the month just started and boom it is done. The factory is back to a 7-day week. Sunday is 11-5. Looks like a split weekend with Saturday being a rainy day and Sunday dry. What better way to spend a rainy day than sampling and buying all kinds of yummy cheeses. Of course, also visiting this historic factory. We spent this week making some flavors Muffaletta was Wednesday, 2.5 Pound wheels yesterday and Dill today. Wheels are a favorite for the holidays. We try to make them at least one day a week. on the day in the picture, we are just making plain blocks.

This weekend is shaping up to be nice. There is no time like it to come visit Crowley Cheese. We will open on Saturday from 10-5 but again will be closed on Sunday. As per usual we will have plenty of samples to try and buy. But don't fret if you are in the area, you can buy our cheese from Patti Plew at her awesome farm stand. As well as in Ludlow at Brewfest Beverage, or Proctorsville at Singletons Store.

Crowley Cheese

Crowley Cheese is a raw milk cheese produced by hand in a historic factory in Healdville, Vermont. Called “one of American’s most important cheeses” and “an American Treasure,” Crowley is the oldest cheese manufacturer in the United States. It has won honors in competition from the American Cheese Society. Its recipe dates to 1824, and its factory to 1882. It is still produced entirely by hand according to its heritage recipe. Visitors can tour the factory, observe the cheesemaking process, and sample the cheese.

The Crowley family began making cheese in Healdville, Vermont in 1824 The cheese was produced in the Crowley family farmhouse until 1882, when A. Winfield Crowley completed the current factory building. At the time, many small cheese factories were opening in the Champlain Valley of Vermont and shipping their cheese to Boston and New York.In the period 1901-1950 nearly all these factories closed; however, the Crowley Cheese factory has operated continuously since its inception. The building is listed on the National Register of Historic Places. Between 1882 and 1962 only Winfield Crowley and his son George Crowely led the cheesemaking at Crowley. The Crowley family continued to operate the company under the leadership of Robert Crowley beginning in 1962, but his untimely death in the factory in 1966 led to the sale of Crowley Cheese to Randolph Smith and his family. The company has been owned and operated by Galen and Jill Jones since 2009.The cheese is still manufactured by hand in the same factory Winfield Crowley built.

Chief Justice of the United States Supreme Court Harlan F. Stone favored Crowley Cheese. Justice Stone enjoyed Crowley Cheese with wine, but in wine tastings he did not like to eat it "because he found Crowley Cheese made red wine taste too good."

Sage cheese, one of the varieties produced by Crowley Cheese, has been called “one of the really indigenous and best native Vermont products”; Crowley has been the only producer of this “green” cheese at various times.

Crowley Cheese is a member of the Vermont Cheese Council.

Production
Crowley cheese is made according to a unique recipe. It falls in the Cheddar family, but unlike a Cheddar it doesn’t go through the cheddaring process. Instead, the production adds a rinse step that reduces the amount of whey in the cheese. This step is somewhat similar to the wash step used in Colby.As a result, Crowley has a moisture content that falls in between a traditional Cheddar and a Colby. This means it is less acidic than Cheddar and can be eaten younger; because it is more moist, it also melts more evenly than Cheddar. Crowley is a raw milk cheese (not Pasteurized or heat-treated) and its minimum aging is governed by the “Golden rule” for raw milk cheese. However, it ages very well, and has the advantage compared to a conventional Cheddar of sharpening more rapidly, making Crowley’s sharpest cheese commercially viable. The milk for Crowley cheese is sourced from two local dairies, one with a Holstein herd and the other with a Jersey herd. Crowley is made from Holstein milk, while the A2 Crowley is made with Jersey milk.

Crowley cheese is produced entirely by hand in small batches of a few hundred pounds at a time.

Looks like a 50/50 weekend coming at us. Saturday looks to like a nice day. Sunday not so nice. We again are closed on Sunday for Mud season. But Saturday is the day we will be here with plenty of samples for you to enjoy. Including the 8-year-old Jersey Milk cheese that everyone is raving about. Thanks to these girls for the milk. But that's just part of what we have for sale. Come see for yourselves.

It's sunny and seventy right now here in Healdville. Stick season is officially here. We do have a great selection of sticks to choose from. We also have a great selection of sticks of cheese. Including some 8-year-old cheese that will knock your socks off. We are going to our stick season hours for a while. Just Open on Saturday during the weekend. We are still here 8-4 Monday thru Friday. Hope everybody gets out and enjoys the weekend without having to mow. That will be happening shortly.

It is Maple open house weekend. Plenty of producers that allow you to come and watch how they do their magic. Plew Farm is one. They are just up the road from the factory. Also, Papa John's Sugar Shack- Maple syrup at the beginning of the road will be open to visitors as well. Check in with your favorite and see what they have on" tap " for the weekend.
Crowley has plenty of maple stuff in stock as well. Make us a stop as well.
