Olive oil is an ancient staple in our society. References to olives and olive oil date back to around 6,000 B.C.E. when the civilizations around the Mediterranean Sea, Syrians, Phoenicians, Cretans and Greeks, started pressing olives for oil. Later on, Romans expanded and mastered the cultivation of olive trees, and olive oil became an important trading commodity.
Called “the great healer” by Hippocrates and “liquid gold” by Homer, olive oil was not only an important component of the ancient Mediterranean diet (as it is still today), but it had a variety of uses. It was used by athletes to clean their bodies after exercise, as a source of light in terracotta lamps, in religious rituals, as a base for perfumes, beauty rituals, an overall lubricant and even as medicine.
