Making one last attempt at saving the semi-sweet Chocolate Raspberry Truffle batch. As my mom says, "you have to throw a few to nail a few!" Not sure what happened with this batch, but pretty sure it has something to do with the raspberry & the semi-sweet Chocolate not wanting to co-exist, as I remember having this issue one other time that I tried the semi sweet instead of the dark chocolate. Anywhoo, you win some, you lose some, and chalk it up to practice makes perfect.

So.....I ran into an issue! Apparently having to go to multiple stores to find cream cheese yielded a 1/3 less fat batch. This is an absolute no no with truffles, and causes set up failure. If everyone is okay there will be two lemon, one chocolate raspberry, and one Oreo cookie truffle instead of the strawberry shortcake. I will issue a coupon for a free strawberry shortcake truffle to everyone who purchased a sampler for use at a later date. I'm sorry for this occurrence.
