Sorry I have not been so active. I’m trying to get back into the groove of things. Thank you all for your continuous support! For more recipes and a bit more activity follow my ig page . For this dinner I made sausage and peppers with onions, garlic and broccoli over white rice. It was delicious! I used Italian style sausages, cut them up and threw them in the pan with olive oil after my veggies were soft. For seasonings I just used salt pepper and since I just love onion and garlic flavor I also used those powders.
To finish the night off I made another chocolate cake! I had realized I forgot to use oil in my last cake LOL Idk what I was thinking, and this time I FORGOT THE DAMN VANILLA! But it was still super tasty and with the oil, VERY FUDGY. I loved it honestly. This time I also topped the batter with shredded coconut on half and an oat and almond blend on the other half. Baked it at 350 for a half hour and poured on top melted dark chocolate frosting and more coconut in it. (I love nuts haha) If y’all couldn’t tell, I have a sweet tooth, so I had to have a scoop of the BEST vegan ice cream out there and an apple cinnamon drizzle! salted caramel ice cream made with cashew and I believe almond milk but it may be coconut. Either way ITS SO GOOD! tbh I couldn’t finish it though. FOLLOW ME ON INSTAGRAM

So Ive already put everything away but today I made vegan CHOCOLATE cake. It was so tasty! I used this recipe minus the apple cider vinegar and I added 1 tablespoon of ground flax seed and a little less than a 1/4 more of a cup of water. Baked it on 350 for 30 minutes and i topped it with dairy free dark chocolate frosting with coconut shreds mixed in it. After that set and hardened i put almond whip cream on top. 😋 ❣️🌱❣️

Plant based chili!
I used one onion, one green bell pepper and one long hot pepper(WITH seeds) and Cayenne powder. This is SPICY. If you don’t like it too spicy do not use the long hot pepper but a little cayenne is okay! Or none at all if you like no spice.
The other seasonings I measured by eye

I only used about 2 tablespoons of sofrito, and 1/2 cup of regular tomato sauce. I add water to get my desired thickness.

defrost chopp and cook 12oz of gardein beefless burger patties. You can use the beefless ground (or any other meat substitute if any) but I prefer this flavor. ALSO I have seen a lot of chili recipes and they all call for about 2 tablespoons of chili powder. I always use a minimum of 3, I tend to use a lot most of the time, as this is all preference. I would start with 2 and add as you cook if needed. I hope you enjoy!

OH and I cooked this on the stove for about a half hour. I brought everything to a boil for about 5 minutes or so and then let it cook on low for the rest of the time. You can cook it longer or even use a slow cooker if you’d like, but this way is quick, easy and still tastes great! 🌱❣️🌱

VEGAN EMPANADAS 🎉 🌱❣️🌱 (in my opinion these are sort of like pastelon on the go) • • •
•2 1/2 ripe plantains
•about 7oz of gardein beefless ground • 1/3 onion chopped
•1/3 green pepper chopped
•1/3 yellow pepper chopped
•1 whole long hot green pepper
•2 garlic cloves chopped •2 packets of sazon •3 tablespoons sofrito •2 tablespoons cilantro base
•1/3 jar of green Spanish olives
•2/3 cup shredded pepper jack daiya cheese •adobo, salt, pepper, garlic powder, onion powder (to taste if preferred)
•little bit of water to moisten it up (measure by eye)

First I used a little amount of olive oil and started to sauté the onion peppers and garlic, then i added the meat. After it starts to cook i add in the seasonings, sofrito and cilantro. Cook until all the flavors start to come out. Put aside in bowl. Then mix in shredded pepper jack daiya cheese and the olives. Now time for the plantains!
Take your sweet plantains and cute them slanted and not too thick, fry in oil until mushy. Put in bowl and smash, let cool.
To assemble the empanadas I took a hand full of plantain and smooshed it into a ball making sure it was very smooth, then i places it on a square piece of cling wrap. Then i mushed it flat and into a circle. Add filling and fold over to make empanada shape. Just fry those babies up in some more oil and TaDa! You’re done!

Spaghetti dinner anyone? 🍝
•1 small onion chopped
•2 garlic cloves chopped
•1 can diced tomatoes
•1 cup of spinach
•2 cups beefless ground
•1 cup of tomato sauce
•2 servings of angel hair pasta
•salt, pepper, garlic, onion powder to taste

First i pan fried the beefless ground, put it to the side. In a pot sauté the garlic and onion. Add diced tomatoes, add spinach, add tomato sauce, lastly the meat. Let simmer while you boil the pasta. Serve up with a sprinkle of Go Veggie vegan parm and you’re set!
