Some skills take years to master. Others start with a waffle cone and a timer. 🤪

Today, Chloee is learning how we make our waffle cones from scratch using our family recipe. Getting that perfect golden brown color takes practice, good timing, and a little patience. The best part? The entire shop smells absolutely amazing.

We’re also fine-tuning our new Clear Lake setup and finding the best workflow as we go (not quite as much space as Marshalltown)! One thing’s for sure… fresh waffle cones are always worth the effort!

It’s Friday, and Sonia is over here making us all question our self-control. 💗

Today we’re following Sonia as she hand-rolls one of our old-fashioned favorites: Raspberry Creams.

These soft-centered candies start with a raspberry-flavored fondant center that’s packed with bright fruit flavor and colored the prettiest shade of pink. We use our extruder to cut each piece evenly before they’re carefully hand-rolled and prepared for their chocolate bath.

Honestly, they’re pretty hard to resist even before they’re dipped.

There’s just something satisfying about watching a tray of perfectly pink raspberry creams come together one piece at a time. And yes… we may have sampled a few for quality control.

OH MY GOODNESS… it’s starting to feel real! 🚴☀️

Nothing gets us more excited for summer than seeing the RAGBRAI route inspection riders roll into town!

Today, our RAGBRAI executive committee had the chance to meet up with the route inspection crew outside Lillie Mae Chocolates, and they could not have been a nicer group of people. Their energy was contagious, and by the time they rolled out of 13th Street, Tom and I were even more excited for what’s coming this summer.

I’ve loved RAGBRAI for years. In fact, Tom and I once rode 78 miles in a single day! Looking back, I’m not entirely sure how we survived it, but we did although Tom’s butt was going to fall off!! lol Maybe someday we’ll do it!!

There is just something special about RAGBRAI. It’s Iowa at its very best. Small towns. Big welcomes. New friendships. Amazing stories. And this year, Marshalltown gets to be part of that story.

We cannot wait to watch our community shine when thousands of riders roll into town. Then again, we think Marshalltown shines every single day.
