Coming up! My MASTERING CHOCOLATE FLAVOR Class from Ecole Chocolate. I'm tasting Erick Ac's Finca Ana María Guatemala Cacao K'uxul 70%. Erick is a farmer and educator in Guatemala, and is also HCP's Implementing Partner for Central America. He's been involved with chocolate for a very long time. The chocolate starts very bright with fresh light acidity, developing into nut notes and then bold hazelnut praliné (hazelnuts caramelized in hot sugar) with A hint of coffee....

5am flight to Panama and then Trinidad for Heirloom Cacao Preservation. Managing Director Alyssa and I are meeting with the folks who represent HCP at origin: Erick Ac in Guatemala and Central America Mey Choy Paz in Peru, and Natalia Aristizábal in Colombia The five of us are gathering to strengthen HCP's work on the ground, to provide more value to farmers, and ultimately, better chocolate to the world.

Tasting Chocolate with Luisa (and Paul and Andre)

Blueberries and plums,coffee, cinnamon, spiceon jungle-dark cacao. Paul and I had the honor of formally tasting some exquisitely precious wild Amazonian chocolate with André Banks and Luisa Abrams. For those who don't know, Luisa is an amazing Brazilian chocolate maker who specializes in Amazonian cacao. You can read much more about her in the book "Wild Chocolate" by Rowan Jacobsen. (Not saying anything more without permission from André and Luisa)

Blueberries and plums, coffee, cinnamon, spice on jungle-dark cacao. Paul and I had the honor of formally tasting some exquisitely precious wild Amazonian chocolate with André Banks and Luisa Abrams.
