Today is Stop Food Waste Day. While most of the conversation centers on purchasing and storage (still important), there's an equipment layer that doesn't get enough attention.

Refrigeration running above safe temperature zones accelerates spoilage. Ovens and steamers that can't hold calibration lead to inconsistent cook times and product loss. Walk-in coolers with failing door seals cause temperature drift that operators often don't catch until product is already compromised.

Refrigeration failures don't happen without warning; they happen when warnings get ignored. Across your walk-in coolers, freezers, reach-in refrigerators, and ice machines, these are the tasks that keep units running and costs down:

Clean condenser and evaporator coils
Check and calibrate temperature controls
Inspect door seals for proper closure
Defrost as needed
Check refrigerant levels (if qualified)
Inspect fans and motors
Clean drain lines
