Ok so walked down to the farmers market Tuesday and they had some pickling cucumbers. I've started two distinctly different jars. The one with the grey auto-venting lid are whole and are being fermented, but only half way. These will be those bright green "half-sour" pickles you see at better delis. The jar with the white lid are "Refrigerator" pickles done with a Polish recipe of herbs, etc... These are in a brine with vinegar and will be similar to a pickle you would buy at the regular grocery. I've been making pickles and fermenting things for a long time. Learned from family who had done it all their lives as well. Good stuff !
